Wir haben ein Rezept wie dieses f\u00fcr Sie vorbereitet, damit Sie einige der Traditionen anderer L\u00e4nder ausprobieren k\u00f6nnen. <\/strong><\/p>\n\n\n\n<h3 class=\"cimsor1 wp-block-heading\"><span class=\"cimsor2\">Zutaten f\u00fcr 4 Personen:<\/span><\/h3>\n\n\n\n<ul class=\"wp-block-list\">\n<li>1 Zucchini&nbsp;<\/li>\n\n\n\n<li>600 g <a href=\"https:\/\/gourmetmarket.hu\/product\/203028\" target=\"_blank\" rel=\"noreferrer noopener\">Chirurgisches Risotto&nbsp;<\/a><\/li>\n\n\n\n<li>3 dl <a href=\"https:\/\/shop.matusz-vad.hu\/hu\/product\/202106\/202106?s=alapl%C3%A9\" target=\"_blank\" rel=\"noreferrer noopener\">Grundsaft<\/a>\/Hochgesalzenes Wasser<\/li>\n\n\n\n<li>2-3 Zweige frischer Rosmarin&nbsp;<\/li>\n\n\n\n<li>80 dkg frisch <a href=\"https:\/\/gourmetmarket.hu\/product\/202934\">Lachs&nbsp;<\/a><\/li>\n\n\n\n<li>500 g Butter&nbsp;<\/li>\n\n\n\n<li>1 Strau\u00df frischer Dill&nbsp;<\/li>\n\n\n\n<li>1 Zitrone&nbsp;<\/li>\n\n\n\n<li>4 Nelken <a href=\"https:\/\/gourmetmarket.hu\/product\/101013\" target=\"_blank\" rel=\"noreferrer noopener\">Knoblauch&nbsp;<\/a><\/li>\n\n\n\n<li>Salz&nbsp;<\/li>\n\n\n\n<li>2 <a href=\"https:\/\/gourmetmarket.hu\/product\/100105\" target=\"_blank\" rel=\"noreferrer noopener\">Lorbeerblatt&nbsp;<\/a><\/li>\n\n\n\n<li>6 M. <a href=\"https:\/\/gourmetmarket.hu\/search-results\/szegf%C5%B1szeg\" target=\"_blank\" rel=\"noreferrer noopener\">Nelken&nbsp;<\/a><\/li>\n\n\n\n<li>6 M. <a href=\"https:\/\/gourmetmarket.hu\/product\/101157\">Rosen<\/a><a href=\"https:\/\/gourmetmarket.hu\/product\/101157\" target=\"_blank\" rel=\"noreferrer noopener\">a<\/a><a href=\"https:\/\/gourmetmarket.hu\/product\/101157\">Pfeffer&nbsp;<\/a><\/li>\n\n\n\n<li>Wei\u00dfweinessig&nbsp;<\/li>\n\n\n\n<li>10 dkg Rohrzucker&nbsp;<\/li>\n\n\n\n<li>1 Prise Safran&nbsp;<\/li>\n\n\n\n<li>3 Schalottenk\u00f6pfe&nbsp;<\/li>\n\n\n\n<li>30 dkg <a href=\"https:\/\/gourmetmarket.hu\/product\/201862\" target=\"_blank\" rel=\"noreferrer noopener\">Parmesan&nbsp;<\/a><\/li>\n\n\n\n<li><a href=\"https:\/\/gourmetmarket.hu\/product\/197902\" target=\"_blank\" rel=\"noreferrer noopener\">Oliven\u00f6l&nbsp;<\/a><\/li>\n\n\n\n<li>2 dl Wei\u00dfwein&nbsp;<\/li>\n<\/ul>\n\n\n\n<h3 class=\"cimsor1 wp-block-heading\"><span class=\"cimsor2\">Die Zucchini vorbereiten:<\/span><\/h3>\n\n\n\n<ul class=\"wp-block-list\">\n<li>Eine Schalotte und 3 Knoblauchzehen in etwas Oliven\u00f6l, vermischt mit Rohrzucker, bei 160-170 Grad goldbraun braten. <\/li>\n\n\n\n<li>Eine Reduktion aus Lorbeerbl\u00e4ttern, rosa Pfeffer und Nelken, einigen Zweigen frischen Rosmarins und den Zwiebeln zubereiten und abseihen. <\/li>\n\n\n\n<li>Die Zucchini in beliebige St\u00fccke schneiden und blanchieren. <\/li>\n\n\n\n<li>Wir bereiten eine Marinade aus Wei\u00dfweinessig, Rohrzucker, Salz und der Reduktion zu, in die wir die gekochten Zucchini geben und im K\u00fchlschrank ruhen lassen.\u00a0<\/li>\n<\/ul>\n\n\n\n<h3 class=\"cimsor1\"><span class=\"cimsor2\">Knusprige Zubereitung der Kr\u00e4uterbutter und des Parmesans:<\/span><\/h3>\n\n\n\n<ul class=\"wp-block-list\">\n<li>250 g zimmerwarme Butter in eine Sch\u00fcssel geben, die abgeriebene Schale von 1 Zitrone und den Saft der H\u00e4lfte der Zitrone hinzuf\u00fcgen. <\/li>\n\n\n\n<li>Mit Salz und Pfeffer, fein gehacktem frischem Dill und geriebenem Knoblauch abschmecken. <\/li>\n\n\n\n<li>Gut durchkneten, dann in Frischhaltefolie einrollen und mindestens 20 Minuten zum Festwerden in den Gefrierschrank legen. <\/li>\n\n\n\n<li>Den Parmesan reiben. Ein Teil davon wird f\u00fcr das Risotto verwendet, der Rest f\u00fcr den knusprigen Parmesan. <\/li>\n\n\n\n<li>Dazu etwas von dem K\u00e4se auf ein mit Backpapier ausgelegtes Backblech geben und im Ofen bei 160-170\u00b0C goldbraun backen.\u00a0<\/li>\n<\/ul>\n\n\n\n<h3 class=\"cimsor1 wp-block-heading\"><span class=\"cimsor2\">Den Lachs und das Risotto zubereiten:<\/span><\/h3>\n\n\n\n<ul class=\"wp-block-list\">\n<li>Den Lachs in gleichm\u00e4\u00dfige Scheiben schneiden, die Haut mit Salz einreiben. <\/li>\n\n\n\n<li>Etwas Oliven\u00f6l in eine hei\u00dfe Pfanne geben und den Lachs auf der Haut je nach Gr\u00f6\u00dfe 4-6 Minuten pro Seite braten. <\/li>\n\n\n\n<li>Dann die Scheiben auf ein Backblech legen, auf jede Scheibe eine Scheibe der vorbereiteten Kr\u00e4uterbutter schneiden und im 170\u00b0C hei\u00dfen Ofen weitere 8 Minuten backen.\u00a0<\/li>\n\n\n\n<li>In der Zwischenzeit die Schalotten in dem restlichen \u00d6l und der Butter anbraten. <\/li>\n\n\n\n<li>Mit Wei\u00dfwein abl\u00f6schen und erneut aufkochen lassen. <\/li>\n\n\n\n<li>Dann den Reis einf\u00fcllen und mit der Br\u00fche oder Salzlake aufgie\u00dfen. F\u00fcr 200 g Risottoreis ben\u00f6tigen Sie 100 ml Fl\u00fcssigkeit. <\/li>\n\n\n\n<li>3-4 Minuten kochen lassen und dann einige Safranzweige, geriebenen Parmesan und kalte Butter hinzuf\u00fcgen und vorsichtig umr\u00fchren. <\/li>\n\n\n\n<li>Noch 2 Minuten, und Sie haben ein perfektes, cremiges Risotto.\u00a0\u00a0<\/li>\n\n\n\n<li>Wenn alles fertig ist, den Lachs nach dem Braten 3 Minuten ruhen lassen und zum Servieren vorbereiten.
