Vor einiger Zeit kochte mir jemand ein sehr schmackhaftes Fleisch in der Pfanne, und als es fast fertig war, warf er ein kleines gr\u00fcnes Etwas dar\u00fcber, das dem Fleisch einen ganz besonderen Geruch und ein besonderes Aroma verlieh. Ich fragte, was das kleine gr\u00fcne Ding sei, und man sagte mir, es sei Salbei.<\/strong><\/p>\n\n\n\n

Ich mag nat\u00fcrliche Dinge sehr, und es war eine sehr idyllische Idee, einfach in den Garten zu gehen, ein paar Bl\u00e4tter zu pfl\u00fccken, sie in die Sch\u00fcssel zu werfen, und schon ist das Geschmackserlebnis eine Stufe h\u00f6her. Aber bei meinen Leseerinnerungen kam mir eine Art von Hexerei und Magie in den Sinn, also habe ich schnell recherchiert.<\/p>\n\n\n\n

Es gibt fast tausend verschiedene Arten von Salbei in derselben Gattung; diejenige, die wir als Salbei bezeichnen, ist der medizinische Salbei. Er ist ein mehrj\u00e4hriger, immergr\u00fcner Halbstrauch. Er ist an der dalmatinischen K\u00fcste beheimatet und wird sowohl als Heil- als auch als Zierpflanze angebaut.<\/p>\n\n\n\n

In der Volksmedizin wurde er zur Behandlung von Halsentz\u00fcndungen, Mundkrankheiten, Schwei\u00dfausbr\u00fcchen und Darminfektionen eingesetzt, und er soll auch ein Nervenmittel sein. Die alten Griechen - und wir wissen, dass sie etwas dar\u00fcber wussten - betrachteten ihn als eine Pflanze der Weisheit und des kultivierten Denkens, und einige arabische \u00c4rzte glaubten sogar, dass Salbei unsterblich machen k\u00f6nne. Die Magie, die mir d\u00e4mmerte, war, dass es in Mittelamerika eine Salbeiart gab, die von Schamanen verwendet wurde und eigentlich ein Halluzinogen war. Unser europ\u00e4ischer Salbei ist viel sanfter als dieser, er wurde eher zur Heilung verwendet.<\/p>\n\n\n\n

Es gibt einen besonderen Stoff, der in sehr hohen Prozents\u00e4tzen in Salbei vorkommt und Thujon genannt wird. Dieser Stoff ist giftig f\u00fcr Gehirn- und Leberzellen und kann in gro\u00dfen Dosen zu Kr\u00e4mpfen f\u00fchren. Diese besondere Substanz ist durch einen legend\u00e4ren Alkohol, den Absinth, bekannt geworden. Es gab auch eine Krankheit namens Absinth, f\u00fcr die Thujon hauptverantwortlich gemacht wurde, auch wenn der arme Mann unschuldig war und Absinth selbst eine erfundene Krankheit ist. Es handelte sich um eine Art Alkoholismus, der mit Halluzinationen und Krampfanf\u00e4llen einherging, weshalb dieses gr\u00fcne Krankenhausgetr\u00e4nk eine Zeit lang verboten war. Ich wei\u00df nicht, ich habe Absinth probiert, es hat mir nicht geschadet, aber es stimmt, dass ich das Gef\u00fchl hatte, rostiges Metall zu schlucken. Kein Wunder, Absinth hat einen Alkoholgehalt von etwa 50-60%, f\u00fcr Schwache kann allein diese Tatsache schon Halluzinationen hervorrufen, denke ich.<\/p>\n\n\n\n

Der arme Tujon war also unschuldig, aber um auf den Salbei zur\u00fcckzukommen: Es stimmt, dass es sich um eine kleine Menge Medizin handelt, aber zu viel kann sch\u00e4dlich sein, und eine l\u00e4ngere Verwendung von \u00e4therischem Salbei\u00f6l wird nicht empfohlen. Aber als Gew\u00fcrz ist er sehr wertvoll. Frisch gepfl\u00fcckter Salbei h\u00e4lt sich im K\u00fchlschrank 4 Tage lang. Er kann zur Herstellung von Speise\u00f6l verwendet, eingefroren und getrocknet werden. Nat\u00fcrlich gilt auch hier das Klischee, dass frisch immer besser ist. Wenn Sie also eine freie Palme auf Ihrer Fensterbank haben, ziehen Sie einen Salbei in einem Topf, es lohnt sich.<\/p>\n\n\n\n

Er passt gut zu allen Arten von Gurken auf Tomatenbasis und taucht oft in Risottos auf. Er passt gut zu allen Fleischsorten, wird normalerweise f\u00fcr Gefl\u00fcgel empfohlen, schmeckt aber auch zu Lamm.<\/p>\n
