Die saure Sahne mit etwas Wasser mischen, salzen und den ger\u00f6steten Knoblauchbrei unterr\u00fchren. In einen Siphon f\u00fcllen, mit zwei Patronen anreichern und bis zum Servieren in den K\u00fchlschrank stellen.&nbsp;<\/li>\n\n\n\n<li>Die Oberfl\u00e4che der Schlangenkrusten mit etwas Oliven\u00f6l bestreichen, salzen und in einer hei\u00dfen Pfanne anbraten. Etwa 4-4 Minuten pro Seite braten. Beim Wenden den zerdr\u00fcckten Knoblauch, kalte Butter, Rosmarin und etwas mehr Oliven\u00f6l hinzugeben. Wenn die Butter eine sch\u00f6ne goldbraune Farbe angenommen hat, den Saft einer Zitrone dar\u00fcber auspressen und den Fisch damit \u00fcbergie\u00dfen.&nbsp;<\/li>\n\n\n\n<li>Als Beilage k\u00f6nnen wir einen k\u00f6stlichen Buchweizensalat mit Honig und Senf anbieten, der warm oder kalt gegessen werden kann. Verwenden Sie diese Beilage als Einlage f\u00fcr die fertigen Butterfischsteaks, spritzen Sie etwas von der sauren Sahne um den Fisch.
