Die Segmentierung des Berufs, die es in der Ausbildung nicht gibt, ist ein Kennzeichen daf\u00fcr, wie sich das heimische Gastgewerbe mit seinen vielen Berufen entwickelt. <strong>Bal\u00e1zs Adamek, der Drittplatzierte des diesj\u00e4hrigen Bocuse d\u2019 Or,<\/strong> ist ein Paradebeispiel daf\u00fcr. <\/em><\/p>\n<ul>\n<li>\n<h4><strong>Was hat Sie dazu bewogen, in die wettbewerbsorientierte Welt des Kochens einzusteigen?<\/strong><\/h4>\n<\/li>\n<li>Die Geschichte ist ganz einfach. Mein Vater ist Chefkoch. Ich war also in der K\u00fcche, seit ich sechs Jahre alt war, ich wurde dort hineingeboren. Wenn ich ihn kennenlernen wollte, musste ich mit ihm zur Arbeit gehen, und so fand ich mich schon sehr fr\u00fch an den \u00d6fen und T\u00f6pfen wieder. Zuerst wollte er mir das ausreden, aber das ging nicht, denn die Welt der K\u00fcche war das, wof\u00fcr ich mich als Kind entschieden hatte. Nach dem Studium war es f\u00fcr mich dasselbe, und der Wettbewerb selbst war bereits im Jahr 2001. Im Grunde habe ich einen merkw\u00fcrdigen Wettbewerbsgeist, der mich st\u00e4ndig zu immer besseren Ergebnissen anspornt. Am Anfang habe ich an kalten Kochwettbewerben teilgenommen, viel mehr gab es damals nicht.<\/li>\n<\/ul>\n<ul>\n<li>\n<h4><strong>Sie waren also schon immer bereit daf\u00fcr?<\/strong><\/h4>\n<\/li>\n<li>Ich sehe in nichts anderem das Potenzial f\u00fcr Entwicklung. Seit ich durch meinen Vater, der seine Karriere im Hotel Gell\u00e9rt begann, dazu gekommen bin, habe ich diese Welt immer wieder gesehen. F\u00fcr mich war es nie eine Frage, was ich werden w\u00fcrde, wenn ich erwachsen bin\u201e. Kochen ist kein Beruf, es ist ein Leben. Ich liebe einfach <span style=\"color: #3366ff;\"><a style=\"color: #3366ff;\" href=\"https:\/\/blog.matusz-vad.hu\/de\/etkezzunk-tudatosan-egeszseg\/\">kochen<\/a>,<\/span> Ich bin gerne in der K\u00fcche. Es ist auch wichtig, dass ich in der K\u00fcche war.<strong>im Restaurant Di\u00f3fa in Z\u00e9kesfeh\u00e9rv\u00e1r<\/strong> Ich arbeite. Es liegt auf halbem Weg zwischen Budapest und dem Plattensee und ist daher ideal als Zwischenstopp f\u00fcr Ausfl\u00fcge zum Plattensee, in die Hauptstadt oder nach Westtransdanubien. Mein Ziel war es immer, unseren G\u00e4sten neben den ungarischen Spezialit\u00e4ten auch die europ\u00e4ische Kochkunst n\u00e4her zu bringen. Deshalb wechsle ich auch nicht gerne den Beruf, sondern gehe gerne auf einen Junggesellenabschied. Und die Wettbewerbe haben mich viel gelehrt, vor allem im Ausland.<\/li>\n<\/ul>\n<p><img loading=\"lazy\" decoding=\"async\" class=\"alignnone wp-image-7275 size-full\" src=\"https:\/\/blog.matusz-vad.hu\/wp-content\/uploads\/2021\/11\/adamek_bocuse_21-10-15-017-scaled-1.jpg\" alt=\"\" width=\"1707\" height=\"2560\"><\/p>\n<ul>\n<li>\n<h4><strong>Wie war es f\u00fcr Sie, beim Bocuse anzufangen?<\/strong><\/h4>\n<\/li>\n<li>Ich habe 2011 zum ersten Mal am Bocuse d'Or teilgenommen. Damals war die K\u00fcchentechnik auf dem Land noch ziemlich r\u00fcckst\u00e4ndig. Schon damals habe ich angefangen zu lernen. Danach habe ich den Geist des Wettbewerbs kennengelernt und ein Gef\u00fchl daf\u00fcr bekommen, worum es geht. Ich habe an ein paar Kochwettbewerben teilgenommen, aber den Bocuse habe ich dann irgendwie verpasst. Jetzt versp\u00fcrte ich den Drang, den Wettbewerb tats\u00e4chlich noch einmal zu machen, also nahm ich ihn ein zweites Mal in Angriff.<\/li>\n<\/ul>\n<ul>\n<li>\n<h4><strong>Wie haben Sie sich gef\u00fchlt, als Sie erfuhren, welche Inhaltsstoffe enthalten sind?<\/strong><\/h4>\n<\/li>\n<li>Ich mag Mangalica sehr, und ich war froh dar\u00fcber. Ich musste aufpassen, dass ich nicht zu fett wurde. Beim Karpfen, der zugegebenerma\u00dfen nicht mein Lieblingsfisch ist, musste ich mir Gedanken \u00fcber die Technik machen, mit der er zubereitet wird. Der Karpfen ist unser Fisch, aber er ist ziemlich stachelig und eignet sich nicht f\u00fcr viel. Die \u00dcberraschung.<span style=\"color: #3366ff;\"><a style=\"color: #3366ff;\" href=\"https:\/\/blog.matusz-vad.hu\/de\/alapanyag-bocuse-szakacs-2021\/\">Rohmaterial,<\/a><\/span> Der Schnittlauch war zum Gl\u00fcck keine gro\u00dfe Herausforderung f\u00fcr mich, er war im Grunde Teil des Rezepts, das ich anstrebte.<\/li>\n<\/ul>\n<p><img loading=\"lazy\" decoding=\"async\" class=\"alignnone wp-image-7271 size-full\" src=\"https:\/\/blog.matusz-vad.hu\/wp-content\/uploads\/2021\/11\/adamek_bocuse_21-10-15-008-scaled-1.jpg\" alt=\"\" width=\"2560\" height=\"1707\"><\/p>\n<ul>\n<li>\n<h4><strong>Wie haben Sie die Zeit \u00fcberbr\u00fcckt?<\/strong><\/h4>\n<\/li>\n<li>Sie haben sechzig Minuten ab dem Zeitpunkt des Kaufs Zeit. Wir haben es rechtzeitig geschafft, aber wir haben einige Fehler gemacht und etwa eine halbe Stunde verloren. Aber das mussten wir opfern, um das Essen auf das Niveau zu bringen, das ich geplant hatte. Deshalb haben wir wahrscheinlich einen Punktabzug bekommen. Wir haben eine Beilage gemacht und ich hatte nicht die Tortenform dabei, mit der wir in der Vorbereitung ge\u00fcbt haben. Hier gab es eine kleine Panne, aber zum Gl\u00fcck konnte mein Kommissar Marcell Kocsis das wieder in Ordnung bringen.<\/li>\n<\/ul>\n<div id=\"attachment_7268\" style=\"width: 2570px\" class=\"wp-caption alignnone\"><img loading=\"lazy\" decoding=\"async\" aria-describedby=\"caption-attachment-7268\" class=\"wp-image-7268 size-full\" src=\"https:\/\/blog.matusz-vad.hu\/wp-content\/uploads\/2021\/11\/20211021_BOCUSE_dijatadas__VG_2148-scaled-1.jpg\" alt=\"\" width=\"2560\" height=\"1708\"><p id=\"caption-attachment-7268\" class=\"wp-caption-text\">Foto: Ungarische Bocuse d'Or Akademie<\/p><\/div>\n<ul>\n<li>\n<h4><strong>Was war das f\u00fcr ein Gef\u00fchl, als der Wettbewerb zu Ende war, die Preisverleihung stattfand und Sie erfuhren, dass Sie einer der drei Gewinner sind?<\/strong><\/h4>\n<\/li>\n<li>Nat\u00fcrlich f\u00fchlt es sich fantastisch an. Ich habe mich sehr dar\u00fcber gefreut, auch wenn im menschlichen Herzen immer eine gewisse Unzufriedenheit lauert. Das ist nur mir selbst gegen\u00fcber, denn mir wurde gesagt, wo die Fehler lagen, und danach \u00e4rgert sich der Fahrer. Nat\u00fcrlich merkt man in solchen Momenten, was ich h\u00e4tte besser machen k\u00f6nnen, was ich h\u00e4tte anders machen k\u00f6nnen, aber das geh\u00f6rt zum Lernprozess dazu. Ich bin sehr dankbar f\u00fcr dieses Praktikum und vor allem f\u00fcr die Anleitung, die ich von den Gro\u00dfen des Berufs erhalten habe. Es spornt mich an, noch besser zu werden und noch mehr zu lernen. Andererseits ist es auch eine Best\u00e4tigung daf\u00fcr, dass <a href=\"https:\/\/blog.matusz-vad.hu\/de\/rendkivul-egeszseges-de-dobbenetesen-keveset-fogyasztunk-belole-zoldseg-gyumolcs\/\"><span style=\"color: #3366ff;\">die Stra\u00dfe ist gut<\/span><\/a><span style=\"color: #3366ff;\">,<\/span> Ich bin dabei.<\/li>\n<\/ul>\n<p><img loading=\"lazy\" decoding=\"async\" class=\"alignnone wp-image-7272 size-full\" src=\"https:\/\/blog.matusz-vad.hu\/wp-content\/uploads\/2021\/11\/adamek_bocuse_21-10-15-010-scaled-1.jpg\" alt=\"\" width=\"2560\" height=\"1708\"><\/p>\n<ul>\n<li>\n<h4><strong>Es stellt sich unweigerlich die Frage: Wie geht es weiter?<\/strong><\/h4>\n<\/li>\n<li>Das h\u00e4ngt von vielen Dingen ab. Konkurrenz befl\u00fcgelt das Leben und man will immer besser werden. Ich habe schon angefangen, dar\u00fcber nachzudenken, wie ich verschiedene Gerichte zubereiten kann, wie ich die Speisekarte im Restaurant variieren kann. Ein Teil des Lernprozesses ist zum Beispiel, wie ich bestimmte Dinge in die Speisekarte einbauen kann. Ich habe bereits beschlossen, dass ich ein Weindinner veranstalten m\u00f6chte, bei dem ich meine Wettbewerbsgerichte, die Bocuse-Gerichte, mit ein wenig Zusatz pr\u00e4sentieren m\u00f6chte. Ich bin also noch dabei, mein Ding zu machen. Wenn Sie mich fragen, ob ich das n\u00e4chste Mal antreten werde, habe ich keine Antwort. Ich mache seit zwanzig Jahren Wettk\u00e4mpfe und bin jetzt in der mittleren Altersgruppe. Die Zukunft wird entscheiden, was der n\u00e4chste Schritt sein wird. Ich habe noch viel Energie und m\u00f6chte noch einiges zeigen, also schlie\u00dfe ich nicht aus, dass ich diese Serie fortsetze.<\/li>\n<\/ul>\n<ul>\n<li>\n<h4><strong>Ist die erh\u00f6hte Aufmerksamkeit durch die Konkurrenz auch gut f\u00fcr das Restaurant?<\/strong><\/h4>\n<\/li>\n<li>Nat\u00fcrlich richtet sich die Aufmerksamkeit dann mehr auf einen einzigen Koch. Es ist kein Zufall, dass ich auch eine Dinnerparty plane. Menschen, die die Gastronomie lieben und aufmerksam sind, werden sicherlich neugierig auf meine Arbeit sein, und das wird sicherlich mehr Interesse f\u00fcr das Restaurant Walnut wecken.
