Ich wollte schon immer K\u00fcchenchef werden. Ich wei\u00df nicht, woher die Idee kam, denn es gibt keine K\u00f6che oder Gastronomen in der Familie. Meine Eltern haben mich unterst\u00fctzt. Wenn ich mich zum Beispiel auf einen Wettbewerb vorbereitete, kochte ich das Wettbewerbsessen so oft, dass wir es zu Hause eine Woche lang a\u00dfen. Interessant ist, dass ich als Kind kein Gem\u00fcse gegessen habe, so dass meine Mutter sogar den Eintopf so zubereiten musste, dass das Gem\u00fcse nicht zu sehen war. Aber sp\u00e4ter, in der Kochschule, ist es mir irgendwie \u201eans Herz gewachsen\u201d, denn als ich anfing, mit den verschiedensten Zutaten zu kochen, merkte ich, dass Gem\u00fcse lecker ist.<\/p>\n\n\n\n

Die Schule war gut, aber als ich dort rauskam, wurde mir klar, dass die Realit\u00e4t ganz anders aussieht. Was wir aus den Lehrb\u00fcchern lernen, ist einfach zu viel f\u00fcr die Welt da drau\u00dfen, und wir verwenden nicht die gleichen Verfahren und Rezepte. Wo haben Sie angefangen zu arbeiten, in welchem Restaurant?<\/strong><\/p>\n\n\n\n

Im Gegensatz zu vielen anderen bin ich nicht ins Ausland gegangen. Ich begann 1999 hier in Szeged im Restaurant K\u00e1lv\u00e1ria zu arbeiten. Ich hatte das Gl\u00fcck, mit K\u00f6chen zu arbeiten, die gerade von 8-10 Jahren im Ausland zur\u00fcckgekehrt waren. Ich habe viel von ihnen gelernt, vom Handwerk des Kochs bis hin zur Einstellung, der Denkweise \u00fcber Essen und Gastfreundschaft. Damals haben wir sehr hart gearbeitet, oft bis zu 300 Stunden im Monat. Wir gingen morgens rein und waren bis zum Feierabend da, oft sechs Tage die Woche. Mein n\u00e4chster Job war in einem Restaurant in Szeged. Dort wurde ich Schichtleiter, aber ich sah, dass ich nicht aufsteigen konnte, also zog ich weiter. Damals habe ich viel dar\u00fcber nachgedacht, ins Ausland zu gehen, aber schlie\u00dflich habe ich beschlossen, dass ich mir zu Hause einen Namen machen m\u00f6chte. Ich schloss die Hotelfachschule ab und plante, einen sch\u00f6nen Schritt nach vorn zu machen, was ich auch tat. <\/p>\n\n\n\n

Gibt es ein Lebensmittel, auf das Sie besonders stolz sind? <\/strong><\/p>\n\n\n\n

Ich bin nicht unbedingt stolz auf komplette Gerichte, da sich die Vision im Laufe der Jahre \u00e4ndert, und oft finde ich nur ein Detail oder ein erg\u00e4nzendes Element eines Gerichts sehr gut gelungen. Ich bin eher stolz, wenn jedes Gericht so aus der K\u00fcche kommt, wie ich es erwarte. Meine wichtigste Aufgabe ist es, die Fehler zu finden und zu korrigieren. Obwohl ich die Leute lobe, sollten Fehler immer besprochen werden. Wenn etwas Neues auf die Speisekarte kommt, gibt es vorher eine gemeinsame Verkostung. Jeder gibt seine Meinung ab, und wir passen uns entsprechend an. <\/p>\n\n\n\n

Was ist derzeit das Hauptgericht in Ihrem Restaurant?<\/strong><\/p>\n\n\n\n

Die G\u00e4ste lieben die gef\u00fcllten Sachen, ein Favorit ist die H\u00fchnerbrust aus Kiew, aber auch die Premiumprodukte sind sehr beliebt, die Krabben,<\/a> a Lachs,<\/a> a Steaks.<\/a> Die Rinderb\u00e4ckchen sind eines unserer Lieblingsgerichte. Unsere G\u00e4ste sind nicht so preissensibel. Neben der Speisekarte haben wir auch Men\u00fckarten mit 8-10 Gerichten. Diese wechseln wir alle zwei bis drei Monate. Fr\u00fcher hatten wir auch Weindinner, bei denen die G\u00e4ste besondere Zutaten probieren konnten, aber jetzt finden sie diese eher auf unseren Men\u00fckarten. Sie k\u00f6nnen auch nach Gerichten fragen, die nicht auf der aktuellen Speisekarte stehen, aber fr\u00fcher auf ihr waren. Wenn wir die Zutaten haben, werden wir sie zubereiten. Hatten Sie nie vor, Ihr eigenes Restaurant zu er\u00f6ffnen? Doch, das wollte ich, und es w\u00e4re auch fast passiert, aber wir haben die Bewerbungsfrist um einen Tag verpasst, so dass die R\u00e4umlichkeiten an jemand anderen vermietet wurden. Ich bereue es nicht wirklich, denn das Angestelltendasein hat auch seine guten Seiten, aber wir haben den Wunsch nach einem eigenen Gesch\u00e4ft noch nicht aufgegeben. Meine Frau und ich arbeiten immer noch an etwas, aber das liegt noch in der Zukunft, es k\u00f6nnte also in den n\u00e4chsten f\u00fcnf Jahren sein.<\/p>\n\n\n\n
