The problem until now has been that many people didn't know about it or couldn't get hold of it immediately. Each part of the pork requires a different process and recipe, but individually they are all heavenly. They eat the acorns of the holm oak, which is native to the Mediterranean, for much of their rearing, and which has a low tannin content. Their meat is darker in colour due to the breed's characteristics, which is proportionally saturated with fat and has a slightly nutty flavour.  It is this true pork flavour that is sought after throughout Europe and is why it is so popular.<\/p>\n\n\n\n<p>M\u00e1riusz Adorj\u00e1nyi told our magazine about his experiences, who is now baking for Hungarian audiences after his international tour.<\/p>\n\n\n\n<p><strong>What is the difference between the taste of pork from the shop, home and iberico?<\/strong><\/p>\n\n\n\n<p>\u201eYou can't compare them, because if you were at a pig slaughter as a child and remember the taste of pork then, you'd be very disappointed to taste store-bought pork today. In my opinion, in many cases we get watery, tasteless meat without character in supermarkets. However, when I find a piece of iberico pork in any shop, I buy it immediately. You know, it still tastes like the \u201ehappy pig\u201d we used to eat and that was the norm. Of course, domestic pork, well kept, is similar, but that's even rarer now. In any case, these are meats worth working with. \u201e<\/p>\n\n\n\n<p><strong>What do you recommend for hosts or lay people to try?<\/strong><\/p>\n\n\n\n<p> \u201eI work mostly with 4 types of iberico cuts: the <a href=\"https:\/\/shop.matusz-vad.hu\/hu\/search?search=iberico\">with tray, slice, cheek and virgin<\/a>. (<em>* papszelet = the lid of the side dish) <\/em>I dice them the day before and then marinate them overnight in Bulgogi sauce,<em> <\/em>I use Korean rice vinegar and various spices. After marinating, I cook it over charcoal, a method that brings the fat content up, <em>brings out the flavours, <\/em>that's why the meat will be heavenly.<em><\/em><\/p>\n\n\n\n<p>From <strong>iberico face<\/strong> pigs in a net <em>I roll<\/em>, this is my method, I'll configure it. Before serving, I toast it in a pan and I'm done.<\/p>\n\n\n\n<p><strong>Iberico tarja<\/strong> part of the delicious pulled pork, it's undisputed and one of the best dishes among them. In addition to this, iberico steak on a spit is also excellent, as described for the pork chops.<\/p>\n\n\n\n<p><strong>Iberico virgin<\/strong> is either in medallions or whole, pan-fried, toasted and then drizzled with garlic-garlic butter. The virgin can be souvidized, but I don't do that. The point, though, is to stop heating at 70 degrees. That's what I loved and that's what I knew how to do. I tried to master all the basics, from potato peeling to the preparation of meat. <em>precise<\/em> and in fact I still make a living from it to this day. In the meantime I fell in love with BBQ and since then I've been selling grills and BBQ ovens, <em>and I also give specialised courses on BBQ and grilling.<\/em> But the only way I give the products is by training my customers, because these are beautiful meats and foods if you treat them right. Good ingredients are important, but technique is just as important <em>approaching perfection<\/em> roasts.<\/p>\n\n\n\n<p><em>Important! Although everyone likes to use the adjective perfect, it is a basic principle in baking and cooking: <strong>the perfect meal does not exist<\/strong>!
