It's there in the fridge, on the menu, a kind of security in the knowledge that it's in our basket. But do you know what it's made of?<\/p>\n\n\n\n<p>Trappistas now come in countless manufacturers, types and textures, depending on where you buy them. It arrived in Hungary only in the 19th century, also thanks to a Trappist monastery. Since then, the recipe has been preserved in better places and the cheese is made according to it, but in many places the milk, and therefore the fat content, has been reduced. Today it is the most widely sold cheese in Hungary.<\/p>\n\n\n\n<p><strong>Did you know? Trappist monks are a religious order of the Roman Catholic Church, following the strict rules of the Cistercians. That's where the cheese got its name and where it still bears it.<\/strong><\/p>\n\n\n\n<h3 class=\"wp-block-heading\">How do we recognise the original?<\/h3>\n\n\n\n<p>When cutting a slice of trappistas, there should be 3-4 mm evenly distributed holes on the cut surface of the cheese. The taste and smell are slightly acidic, but the aftertaste is slightly sweet and intensely salty. It is a mature cheese made from cow's milk with the addition of lactic acid bacteria. Originally, true French Trappist cheese is made from raw milk, i.e. it is not pasteurised, but is matured for two months. In fact, good and valuable products are usually where the traffickers appear, as they did in the Trappist factory in the mid-20th century.<br>In Keszthely, on the northern shore of Lake Balaton, the workers of the cheese factory, led by Dezs\u0151 Buda, started to do a little stock picking. Within a short period of time, several hundredweight of cheese disappeared from the cheese factory, including the high quality ones. It turned out to be a real cheese smuggling operation, supported by false delivery notes, sold to small shops on the black market and then managed the proceeds themselves.
