And around dinner, salmon is often served with potatoes or risotto, so we've prepared a recipe like this for you to try out other countries' traditions. <\/strong><\/p>\n\n\n\n<h3 class=\"cimsor1 wp-block-heading\"><span class=\"cimsor2\">Ingredients for 4 people:<\/span><\/h3>\n\n\n\n<ul class=\"wp-block-list\">\n<li>1 courgette&nbsp;<\/li>\n\n\n\n<li>600 g <a href=\"https:\/\/gourmetmarket.hu\/product\/203028\" target=\"_blank\" rel=\"noreferrer noopener\">Surgital risotto&nbsp;<\/a><\/li>\n\n\n\n<li>3 dl <a href=\"https:\/\/shop.matusz-vad.hu\/hu\/product\/202106\/202106?s=alapl%C3%A9\" target=\"_blank\" rel=\"noreferrer noopener\">basic juice<\/a>\/highly salted water<\/li>\n\n\n\n<li>2-3 sprigs of fresh rosemary&nbsp;<\/li>\n\n\n\n<li>80 dkg fresh <a href=\"https:\/\/gourmetmarket.hu\/product\/202934\">salmon&nbsp;<\/a><\/li>\n\n\n\n<li>500 g butter&nbsp;<\/li>\n\n\n\n<li>1 bunch fresh dill&nbsp;<\/li>\n\n\n\n<li>1 lemon&nbsp;<\/li>\n\n\n\n<li>4 cloves <a href=\"https:\/\/gourmetmarket.hu\/product\/101013\" target=\"_blank\" rel=\"noreferrer noopener\">garlic&nbsp;<\/a><\/li>\n\n\n\n<li>Salt&nbsp;<\/li>\n\n\n\n<li>2 <a href=\"https:\/\/gourmetmarket.hu\/product\/100105\" target=\"_blank\" rel=\"noreferrer noopener\">bay leaf&nbsp;<\/a><\/li>\n\n\n\n<li>6 sts <a href=\"https:\/\/gourmetmarket.hu\/search-results\/szegf%C5%B1szeg\" target=\"_blank\" rel=\"noreferrer noopener\">cloves&nbsp;<\/a><\/li>\n\n\n\n<li>6 sts <a href=\"https:\/\/gourmetmarket.hu\/product\/101157\">roses<\/a><a href=\"https:\/\/gourmetmarket.hu\/product\/101157\" target=\"_blank\" rel=\"noreferrer noopener\">a<\/a><a href=\"https:\/\/gourmetmarket.hu\/product\/101157\">pepper&nbsp;<\/a><\/li>\n\n\n\n<li>White wine vinegar&nbsp;<\/li>\n\n\n\n<li>10 dkg cane sugar&nbsp;<\/li>\n\n\n\n<li>1 pinch of saffron&nbsp;<\/li>\n\n\n\n<li>3 heads of shallots&nbsp;<\/li>\n\n\n\n<li>30 dkg <a href=\"https:\/\/gourmetmarket.hu\/product\/201862\" target=\"_blank\" rel=\"noreferrer noopener\">Parmesan&nbsp;<\/a><\/li>\n\n\n\n<li><a href=\"https:\/\/gourmetmarket.hu\/product\/197902\" target=\"_blank\" rel=\"noreferrer noopener\">Olive oil&nbsp;<\/a><\/li>\n\n\n\n<li>2 dl white wine&nbsp;<\/li>\n<\/ul>\n\n\n\n<h3 class=\"cimsor1 wp-block-heading\"><span class=\"cimsor2\">Preparing the courgettes:<\/span><\/h3>\n\n\n\n<ul class=\"wp-block-list\">\n<li>Fry one shallot and 3 cloves of garlic in a little olive oil, mixed with cane sugar, at 160-170 degrees until golden brown. <\/li>\n\n\n\n<li>Prepare a reduction of bay leaves, rose pepper and cloves, a few sprigs of fresh rosemary and the onions and strain. <\/li>\n\n\n\n<li>Cut the courgettes into any size pieces and blanch. <\/li>\n\n\n\n<li>We prepare a marinade of white wine vinegar, cane sugar, salt and the reduction, in which we add the boiled courgettes and leave to rest in the fridge.\u00a0<\/li>\n<\/ul>\n\n\n\n<h3 class=\"cimsor1\"><span class=\"cimsor2\">Crunchy preparation of the herb butter and Parmesan:<\/span><\/h3>\n\n\n\n<ul class=\"wp-block-list\">\n<li>Place 250 g of room temperature butter in a bowl, add the grated zest of 1 lemon and the juice of half of the lemon. <\/li>\n\n\n\n<li>Season with salt and pepper to taste, finely chopped fresh dill and grated garlic. <\/li>\n\n\n\n<li>Knead well, then roll in a plastic wrap and place in the freezer for at least 20 minutes to set. <\/li>\n\n\n\n<li>Grate the Parmesan. Part of it will be used in the risotto, and the rest will be used to make Parmesan crisp. <\/li>\n\n\n\n<li>To do this, place a little of the cheese on a baking tray lined with baking paper and bake in a 160-170\u00b0C oven until golden brown.\u00a0<\/li>\n<\/ul>\n\n\n\n<h3 class=\"cimsor1 wp-block-heading\"><span class=\"cimsor2\">Preparing the salmon and risotto:<\/span><\/h3>\n\n\n\n<ul class=\"wp-block-list\">\n<li>Cut the salmon into even slices, rub the skin with salt. <\/li>\n\n\n\n<li>Pour a little olive oil into a hot pan and fry the salmon on its skin for 4-6 minutes per side, depending on its size. <\/li>\n\n\n\n<li>Then transfer the slices to a baking tray, cut a slice of the prepared herb butter on each slice and bake in a 170\u00b0C oven for a further 8 minutes.\u00a0<\/li>\n\n\n\n<li>Meanwhile, fry the shallots in the remaining oil and butter. <\/li>\n\n\n\n<li>Add white wine and bring back to the boil. <\/li>\n\n\n\n<li>Then pour in the rice and pour in the stock or brine. For 200 g of risotto rice you need 100 ml of liquid. <\/li>\n\n\n\n<li>Cook for 3-4 minutes and then add a few sprigs of saffron, grated Parmesan and cold butter and stir gently. <\/li>\n\n\n\n<li>Another 2 minutes and you have a perfectly creamy risotto.\u00a0\u00a0<\/li>\n\n\n\n<li>Once everything is ready, let the salmon rest for 3 minutes after frying and prepare to serve.
