He graduated as a pastry chef in the cookery school and later worked in Keszthely with a chef from Kecskem\u00e9t, G\u00e1bor Ugocsai, from whom he learned a lot. He worked abroad for a few years, where he got closer to the dessert business. After a while he found his vocation as a patissier. He started making animal figures and won first prizes in various competitions. This brought him recognition and his work was picked up by social media. What motivated you to do this? <\/strong><\/li>\n<li><strong>Jakabfi D\u00e1vid:<\/strong> I've had a lot of people telling me for years that I should open a bakery. They were also pushing for it because on the one hand they knew my background, and on the other hand there wasn't a really good artisan baker in our area. In the countryside <a href=\"https:\/\/shop.matusz-vad.hu\/hu?utm_source=Matusz_vad_Blog\" target=\"_blank\" rel=\"noopener\">hospitality getting better<\/a> results, and it would be good to transfer this to the confectionery industry. Every craftsman should do what he knows how to do and show himself. It is also important to pass on one's knowledge. Of course, there were also existential arguments in favour. In truth, I thought I needed a third leg in my activities, which was definitely opening a bakery. It's also important for me to be able to meet the public, the guests, directly. I noticed during the last workshops that the products we created sold out almost immediately. It feels really good to get immediate feedback. The concrete decision was made when I was in Egerszeg to give a course. I saw a tiny, very well functioning, beautiful jewellery box, fantastic <a href=\"https:\/\/blog.matusz-vad.hu\/en\/piskota-vilagnap-finomsag\/?utm_source=Matusz_vad_Blog\" target=\"_blank\" rel=\"noopener\">with cakes<\/a>. It was a real manufactory with a focus on quality, and I said to myself, we could do that.<\/li>\n<li><strong>B.T.: You've already brought a lot to the table in the macaron field. It's probably one of the most important trajectories you're working on. Do you include that in your repertoire?<\/strong><\/li>\n<li><strong>J.D.:<\/strong> Of course! In fact, it was important, for me the world revolves around macarons. When the macaron season is over and we don't have to make as many, it frees up some of my time, which I don't have a lot of (laughs). When I invented my flour, there were bakeries who said \u201eoh, you can't make a large batch of cakes with this\u201d. That was my biggest motivation at the time, I just did it. Now a lot of people thought that I was hiding behind the role of an educator and had no insight from the producer side. Now it's also proving that I can see the whole of the confectionery industry and get it right.<\/li>\n<li><strong>B.T.: How do we imagine the business itself?<\/strong><\/li>\n<li><strong>J.D.:<\/strong> We actually opened the shop next to the workshop. You don't have to imagine a huge room. There's a display case, a small lobby, and it's really more of a show kitchen. It's really nice that you can see into the workshop and everything is happening in front of people. There was a story recently about people coming in to order pistachio cake. I was working with pistachios and I was able to show them what they smelled like when I took them out of the oven. It's divine when you get to the inner sugars of the oilseeds and how much more it adds to the cakes. I really enjoy showing my guests the <a href=\"https:\/\/shop.matusz-vad.hu\/hu\/new_products?utm_source=Matusz_vad_Blog\" target=\"_blank\" rel=\"noopener\">different raw materials<\/a>, seeds to see what the Peruvian chocolate we're working with looks like, or the R\u00e1k\u00f3czi cheese curds when they're still half-finished. The guests really appreciate that. A whole other world opens up for them. There are many traditional confectioneries in Nagykanizsa, too. That's why it's a great pleasure for me to hear people say \u201efinally, this is what Nagykanizsa has been waiting for\u201d, finally there is a handicraft confectionery like this in the countryside.<\/li>\n<li><strong>B.T.: Isn't the fact that customers can see everything disturbing in the sense that something might not work out perfectly?<\/strong><\/li>\n<li><strong>J.D.:<\/strong> We own up to our minor mistakes! It's never a problem if something doesn't turn out perfectly, of course we strive for that every day. It's not like everything is always flawless. We don't aim for a perfect dessert retouched for the Instagram, we aim for delicious! That's how you can tell that it's a real artisan, that it's really homemade. In fact, it's an advantage! Let's take a look at where the Pajta restaurants are and what a fantastic success they are having. Not to mention that we are right next to the M7, centrally located, with lots of foreigners and people passing through. To add to the truth, I've trained in several top pastry shops in the countryside, which are doing very well. From this, I think there is a justification for me to personally deliver my cakes to people. Fortunately, the word spread very quickly after we opened. It's word of mouth and people are almost passing the door handles to each other. We have also priced ourselves as being in the very medium category. I'm really on two horses at the moment. It remains to be seen whether it will be towards courses or towards hospitality. Now I'm going to see which one is going to be my long term path. Also, many people have said that in this \u201ewar\u201d time, when the recession and price rises are affecting everyone, it was brave to open. To that I just say, I believe in myself!<\/li>\n<li><strong>B.T.: How do you imagine the future?<\/strong><\/li>\n<li><strong>J.D.:<\/strong> I love doing this, this is my life. It would be nice if I could pass it on to my child. Luckily, he has the affinity! She has a small whisk and a small spatula, she never puts them down and when she comes into the workshop she starts to stack pots. It's busy now, but for me there is one sacred thing, and that is bath time! Whatever happens, I drop the whisk, it's his time and it's sacrosanct. I am a pastry chef and I will continue to make desserts. What I definitely want to continue is education and teaching. I also have a sticking point: at weddings, forget about those multi-storey cake things built with metres of fondant!
