After 15 minutes of cooking, when the consistency is thick, add the confit garlic (without oil!) and a little cold butter and blend until creamy using a stick blender or thermomixer.<br>To obtain a completely homogeneous and silky consistency, pass through a fine sieve,<br>set aside until serving, and place a piece of plastic wrap on top to prevent \u201dskin\".<\/p>\n\n\n\n<p>A <em>sirloin steak<\/em> store at room temperature for at least 1 hour before baking to start<br>to work. Wipe the surface of the meat dry with a paper towel and fry it in a heated pan with a little oil.<br>a nice, even crust is baked on the cutting surface.
