They were assisted by a young commis (assistant).<\/p>\n\n\n\n<figure class=\"wp-block-video\"><video height=\"720\" style=\"aspect-ratio: 1280 \/ 720;\" width=\"1280\" controls src=\"https:\/\/blog.matusz-vad.hu\/wp-content\/uploads\/2021\/10\/Bocus-mangalica.mp4\"><\/video><\/figure>\n\n\n\n<p>According to the competition rules, they had to serve a competition dish of mainly local ingredients, spicy paprika, carp, mangalitsa and mangalitsa tartare, one fish and one meat dish. The obligatory ingredient for the fish course was the Balaton Sudar carp, which had to be prepared on a restaurant-style plate. The fish dish also had to include Bezdan red pepper. The meat dish had to be accompanied by at least three different side dishes and at least one sauce. The teams were also given a surprise ingredient in the morning, chives, and then had four and a half hours to prepare the dish, consisting of a starter, soup and main course. But as well as taste and visual appeal, the judges also looked at and scored the team's harmony, the environmentally friendly and low-waste production of the food, and the workbench and working environment during the cooking process.<\/p>\n\n\n\n<p>The race started at 9.30 a.m., while the food was served from 2 p.m.  The tasting jury included Zolt\u00e1n Hamvas, President of the Hungarian Bocuse d'Or Academy, Lajos B\u00edr\u00f3, J\u00e1nos Erdei, Tiago Sabarigo, Jen\u0151 R\u00e1cz, \u00c1kos S\u00e1rk\u00f6zi, \u00c1d\u00e1m Barna and L\u00e1szl\u00f3 Jahni. Tam\u00e1s Sz\u00e9ll, Lajos Lutz, Tam\u00e1s Vajna, Sz\u00e1sa Ny\u00edri, Viktor Segal and Csaba Harmath were on the kitchen jury.<\/p>\n\n\n\n<h2 class=\"wp-block-heading\" id=\"h-a-gy-ztes-dalnoki-bence-m-g-az-eredm-nyhirdet-s-el-tt-besz-lt-arr-l-hogy-a-c-ljuk-az-hogy-megmutass-k-hogy-egy-bajai-hal-szl-vel-is-lehet-gy-zni-s-b-r-nagyon-fontos-a-l-tv-ny-m-hisznek-abban-hogy-nem-kell-t-ltolni-az-teleket-hiszen-sz-p-lehet-egy-tel-egyszer-en-szolidan-visszafogottan-is\">The winner, Bence Dalnoki, said before the results were announced that their goal was to show that it is possible to win with a Baja chowder. And although visuals are very important, they believe that food should not be overdone, because a dish can be beautiful simply, simply and understatedly.<\/h2>\n\n\n\n<figure class=\"wp-block-video\"><video controls src=\"https:\/\/blog.matusz-vad.hu\/wp-content\/uploads\/2021\/10\/bocus-bajai-hal.mp4\"><\/video><\/figure>\n\n\n\n<p>According to the description of the Hungarian Bocuse d'Or Academy, Bence joined Szabina Szull\u00f3 and Tam\u00e1s Sz\u00e9ll's team immediately after his apprenticeship, and in his own words, he learned everything from them.
