Nebud\u00fa ch\u00fdba\u0165 ochutn\u00e1vky, v\u00fdroba klob\u00e1s, kult\u00farny a detsk\u00fd program.<\/h2>\n\n\n\n<p>Prv\u00fd festival sa konal v roku 1997: my\u0161lienkou bolo, \u017ee B\u00e9k\u00e9scsaba m\u00e1 dlh\u00fa trad\u00edciu chovu a spracovania o\u0161\u00edpan\u00fdch, ktorej hmatate\u013en\u00fdm produktom je klob\u00e1sa Csabai.<\/p>\n\n\n\n<p>Zakladatelia festivalu chceli zachova\u0165 a propagova\u0165 tento tradi\u010dn\u00fd miestny produkt, jeho v\u00fdrobu, atmosf\u00e9ru a z\u00e1\u017eitky spojen\u00e9 s t\u00fdmto podujat\u00edm, a to tak medzi mlad\u00fdmi gener\u00e1ciami, ako aj medzi \u0161irokou verejnos\u0165ou. Cie\u013eom bolo zorganizova\u0165 podujatie, na ktorom by sa verejnos\u0165 obozn\u00e1mila s v\u00fdrobou klob\u00e1s a s postupmi pri zab\u00edjan\u00ed o\u0161\u00edpan\u00fdch, ako aj s v\u00fdstavou potrav\u00edn, jarmokom, \u0161irokou \u0161k\u00e1lou kult\u00farnych aktiv\u00edt, \u013eudov\u00fdm tancom a cig\u00e1nskou hudbou.<\/p>\n\n\n\n<p>Toto je recept na prav\u00fa klob\u00e1su Csabai:<\/p>\n\n\n\n<p>Ingrediencie: brav\u010dov\u00e9 m\u00e4so v\u0161etk\u00fdch druhov bez pridania \u010fal\u0161ej slaniny bude dostato\u010dne mastn\u00e9 a bezkonkuren\u010dne chutn\u00e9.<\/p>\n\n\n\n<p>Kr\u00e1janie: tradi\u010dne sa vykon\u00e1va no\u017emi. M\u00e4so nakr\u00e1jan\u00e9 na p\u00e1siky sa kr\u00e1jalo na mal\u00e9 k\u00fasky. Predpoklad\u00e1 sa, \u017ee mlyn\u010dek na m\u00e4so m\u00e4so pr\u00edli\u0161 rozdrv\u00ed a takmer vytla\u010d\u00ed \u0161\u0165avu, \u010d\u00edm sa klob\u00e1sa st\u00e1va drobivou a po vysu\u0161en\u00ed pripom\u00edna piliny. M\u00e4so mlet\u00e9 no\u017eom zost\u00e1va v\u00e4\u010d\u0161ie a \u0161\u0165avnatej\u0161ie a takto pripraven\u00e1 klob\u00e1sa sa nedrob\u00ed, \u013eah\u0161ie sa kr\u00e1ja a je aromatickej\u0161ia v\u010faka \u0161\u0165ave, ktor\u00e1 v nej zost\u00e1va.<\/p>\n\n\n\n<p>Od prvej svetovej vojny sa v\u0161ak mlyn\u010dek na m\u00e4so na v\u00fdrobu klob\u00e1s stal be\u017enou z\u00e1le\u017eitos\u0165ou.<\/p>\n\n\n\n<p>Ochutenie: zmes na plnenie sa rozprestrie na st\u00f4l v hr\u00fabke asi 10 cm, posype sa nasekan\u00fdm cesnakom, potom nasekan\u00fdmi alebo cel\u00fdmi semienkami rasce, potom mletou silnou a farbiacou paprikou a nakoniec so\u013eou.<\/p>\n\n\n\n<p>Plnenie: klob\u00e1sy sa teraz plnia v\u00fdlu\u010dne strojovo. Na mlyn\u010dek na m\u00e4so pripevnen\u00fd k stolu sa nasad\u00ed lievik, \u010drev\u00e1 sa natiahnu na lievik a potom sa ot\u00e1\u010dan\u00edm p\u00e1ky plnia, pri\u010dom sa stroj neust\u00e1le nap\u013a\u0148a n\u00e1pl\u0148ou do klob\u00e1s a klob\u00e1sa je hotov\u00e1. T\u00fato oper\u00e1ciu vykon\u00e1vaj\u00fa dve osoby. Jeden z nich obsluhuje stroj (pod\u00e1va a poh\u00e1\u0148a ho), druh\u00fd, stojac oproti nemu, dr\u017e\u00ed klob\u00e1su v ruk\u00e1ch, ke\u010f sa pomaly pos\u00fava po lieviku, nastavuje ju, a ke\u010f je stroj vo\u013ene naplnen\u00fd, svoj\u00edm \u00fachopom zahus\u0165uje n\u00e1pl\u0148 v \u010dreve a z\u00e1rove\u0148 ju prepichuje pr\u00fadom alebo hrub\u0161ou ihlou, aby odstr\u00e1nil vzduch, ktor\u00fd by mohol by\u0165 vo vn\u00fatri zachyten\u00fd. Je to d\u00f4le\u017eit\u00e9, preto\u017ee tak\u00e9to vzduchov\u00e9 vreck\u00e1 s\u00fa nebezpe\u010dn\u00e9, m\u00f4\u017eu sp\u00f4sobi\u0165 plesne a klob\u00e1sa sa m\u00f4\u017ee pokazi\u0165.<\/p>\n\n\n\n<p>Tenk\u00e1 klob\u00e1sa sa zvy\u010dajne ni\u010d\u00edm nezatv\u00e1ra ani nezv\u00e4zuje, ale jednoducho sa na oboch koncoch \u201czovrie\u201d. Naproti tomu hrub\u00e9 \u010drev\u00e1 na letn\u00e9 klob\u00e1sy sa vopred nare\u017e\u00fa na spr\u00e1vnu d\u013a\u017eku a hrub\u0161\u00ed koniec sa pred plnen\u00edm uzavrie; kedysi sa to robilo pomocou slu\u010dky, ale v s\u00fa\u010dasnosti sa sk\u00f4r zv\u00e4zuje \u0161n\u00farkou. Ten\u0161\u00ed koniec hotovej hrubej klob\u00e1sy sa v\u017edy zvia\u017ee \u0161pag\u00e1tom a \u0161pag\u00e1t sa pou\u017e\u00edva aj na vytvorenie \u201cucha\u201d, za ktor\u00e9 sa m\u00f4\u017ee zavesi\u0165 na ty\u010d na \u00fadenie a nesk\u00f4r po\u010das skladovania. Stopka tenkej klob\u00e1sy je dlh\u00e1 40 - 50 cm, zatia\u013e \u010do stopka hrubej klob\u00e1sy je zvy\u010dajne dlh\u00e1 40 cm.<\/p>\n\n\n\n<p>M\u00e4siari a v\u00fdrobcovia klob\u00e1s nech\u00e1vaj\u00fa u\u017e hotov\u00fa mlet\u00fa n\u00e1pl\u0148 dlh\u0161ie alebo krat\u0161ie odst\u00e1\u0165 (pr\u00edpadne aj nieko\u013eko dn\u00ed), \u010do sa naz\u00fdva \u201csu\u0161enie\u201d, aby sa odstr\u00e1nila prebyto\u010dn\u00e1 \u0161\u0165ava. V pr\u00edpade dom\u00e1cich klob\u00e1s nie je obvykl\u00e9, aby sa klob\u00e1sa nechala vysu\u0161i\u0165, ale po dochuten\u00ed si klob\u00e1s\u00e1ri nalej\u00fa poh\u00e1r alebo dva v\u00edna a ihne\u010f za\u010dn\u00fa plni\u0165 klob\u00e1su.<\/p>\n\n\n\n<p>\u00dadenie klob\u00e1s: pri \u00faden\u00ed klob\u00e1s sa muselo dba\u0165 na to, aby sa palivo nezap\u00e1lilo, ale len \u017eeravilo a dymilo. Hor\u00faci dym a e\u0161te viac plame\u0148 roztavili tuk z klob\u00e1sy a vytvorili v nej dutiny, ktor\u00e9 mohli sp\u00f4sobi\u0165 \u017eltnutie, plesnivenie a kazenie. V niektor\u00fdch pr\u00edpadoch sa klob\u00e1sa \u00fadila len cez de\u0148 a v noci odpo\u010d\u00edvala, v in\u00fdch sa \u00fadila vo dne v noci a ohe\u0148 sa musel priklada\u0165 aj v noci. V prvom pr\u00edpade sa tenk\u00e9 klob\u00e1sy \u00fadili 6 - 8 dn\u00ed, v druhom pr\u00edpade 12 - 16 dn\u00ed, pri\u010dom polovica tohto \u010dasu sta\u010dila na denn\u00e9 a no\u010dn\u00e9 \u00fadenie.<\/p>\n\n\n\n<p>Skladovanie klob\u00e1sy: v minulosti, ke\u010f domy v B\u00e9k\u00e9scsabe mali slamen\u00e9 strechy, sa \u00faden\u00e1 klob\u00e1sa mohla skladova\u0165 na podkrov\u00ed, preto\u017ee slamen\u00e1 strecha chr\u00e1nila klob\u00e1su pred zamrznut\u00edm v zime a pred rozmrazen\u00edm v lete. V sedliackych domoch sa \u00faden\u00e9 klob\u00e1sy ve\u0161ali na ty\u010de a nosili do \u0161pajze, ktor\u00e1 sa \u010dasto vetrala, aby sa klob\u00e1sy vysu\u0161ili. Komora sa \u010dasto bielila, aby sa v nej neusadzovali \u010dervy a mole.
