Na bezpe\u010dn\u00e9 prev\u00e1dzkovanie stravovacieho zariadenia je potrebn\u00e9 pozna\u0165 tieto predpisy. V rokoch 1985 a\u017e 1992 vysoko uzn\u00e1van\u00e9 odborn\u00e9 org\u00e1ny, ako napr\u00edklad Medzin\u00e1rodn\u00e1 komisia pre mikrobiologick\u00e9 \u0161pecifik\u00e1cie potrav\u00edn a N\u00e1rodn\u00fd poradn\u00fd v\u00fdbor USA pre mikrobiologick\u00e9 krit\u00e9ri\u00e1 potrav\u00edn, \u010falej rozv\u00edjali te\u00f3riu a prax tohto syst\u00e9mu. Od roku 1990 bol za\u010dlenen\u00fd aj do pr\u00e1vnych predpisov a smern\u00edc Eur\u00f3pskej \u00fanie.<\/p>\n\n\n\n<p>V r\u00e1mci HACCP je d\u00f4le\u017eit\u00fd pr\u00edstup orientovan\u00fd na spotrebite\u013ea alebo na spotrebn\u00fd re\u0165azec v\u00fdrobku, t. j. nemal by sa sk\u00fama\u0165 len kone\u010dn\u00fd v\u00fdrobok, ale cel\u00fd re\u0165azec v\u00fdroby potrav\u00edn.
