Bacon is a food that we all love to use. It is not only a huge success in Hungarian cuisine, but is also a popular ingredient all over the world. We use it in countless dishes, but we also use it in areas that many people don't even suspect. 

What is bacon?

The most widely consumed American cut is made from pork belly, while the Canadian cut is taken from the loin in the middle of the back and is called „back bacon”.

A “bacon” can be traced back to the Middle English word “bacoun”, which in turn derives from the Proto-Indo-European word “bacho”. It means the back of a pig or ham. Unsliced bacon is commonly known as „bacon”, but used to be called „flitch”.

For the 89% of Brits, bacon is an indispensable part of the „complete English breakfast”. Other items on the menu include eggs, sausages, beans and toast. More than 50% of Americans have bacon in the home, while 90.4% of British pantries have it. In our country the proportion is 30 -40%.

During the Second World War, the United States government set up the so-called „American Committee to Save the American People”. Its purpose was to encourage housewives to save and collect the fat left over from cooking bacon. The reason is rather odd. The fat was useful to the war industry because a pound of fat contains enough glycerine to produce the same amount of explosives.

In 1920, Parisian butcher John Fargginay invented a cologne water that brought the unmistakable aroma of bacon. He was able to evoke childhood memories and marketed it with great success. Its fans included film stars, celebrities and heads of state.

Recipes and curiosities with bacon

Bacon processing recipes also vary considerably from country to country. American bacon, for example, contains many varieties that are smoked with wood (hickory or maple) or corn cobs before being flavoured with molasses, honey, brown sugar, chilli pepper or cinnamon. Their sweetness or saltiness varies from state to state.

Bacon is also used to flavour various spirits. For vodka, as well as for many beers and bourbons. Its smoky flavour is also a favourite among bartenders in various cocktails. These include the Bacon Bloody Mary or the Bacontini and Candied Bacon Martini, which use sugar-coated caramelised bacon slices as a garnish.

International Bacon Day. In the United States, Bacon Day is celebrated on the Saturday before “Labor Day”. From breakfast to dinner, through desserts, bacon is eaten all day.

In the United States and Canada, the salonnamania is at a high level. As a result, there is bacon ice cream, bacon flavoured chewing gum, bacon doughnuts, maple syrup and candied bacon.
