Everyone has probably come home from work exhausted and with nothing to eat for dinner. With the chilly autumn and winter evenings coming up, a hot and hearty soup like this fantastically delicious and quick duck pho is sure to be a treat!
Ingredients for 4 people:
- 1 l beef base lé
- 50 dkg duck meat
- 5 g coriander seeds
- 2 dkg fresh ginger
- Salt, pepper to taste
- 4 spring onions
- half a bunch of coriander
- 1 can of mung bean sprouts
- 0,5 dl olive oil
- 15 dkg rice pasta
- 1 chilli pepper
Preparing the duck pho
- First, fry the duck meat, which has already been braised, in a little olive oil and set aside until serving.
- Next, dry the coriander seeds in a saucepan, lightly fry them, add a little olive oil, add the half the ginger and fry it a little. Pour the whole mixture into the prepared with beef stock.
- Then season with salt and pepper. Boil it for a few minutes and you can eat it immediately.
- In a soup bowl, place the duck meat pieces, pile the rice noodles on top, add the sprouts, diced spring onion, chopped fresh ginger and chopped coriander greens.
- Top with chilli rings to taste. Serve immediately, hot.
