A simple and light Mediterranean dinner idea to spice up your weekdays!
Ingredients:
- Shrimp skewers
- Garlic
- Olive oil
- Salt
- Bors
- Lime
- Basil
- Pine nuts
- Parmesan
- Grilled vegetables
Preparing the shrimp skewers:
Mix the olive oil with the lime juice, crushed with garlic. Toss the prawn skewers and leave to marinate for about half an hour. Bring to the boil a grill pan. Place the skewers in the pan. A shrimp it cooks quickly, 2-3 minutes per side is plenty, but be careful not to overcook it, as it will be chewy! Salt and pepper to taste.
A great addition is pesto, which is easier to make than you might think. To make the pesto, throw the peeled garlic into a mortar, mash it, add the fresh basil, olive oil, pine nuts, grated Parmesan, salt and mix well to make a creamy paste.
As a side dish, grill some vegetables for a really fresh spring meal.
