Turkey's popularity is perhaps more volatile than any other meat. There was a time when it was highly praised and everyone stuffed, stewed or even minced turkey breast instead of beef or pork. Then it just got boring, the flavour got too intense and it became a bit of a parking lot. Despite this, turkey meat still has a high protein content, low calories, is easy to digest and is also quite good value for money. Turkey gizzard is no exception, and it's an easily available ingredient, at a good price and in large quantities, which retains its well-known texture and shape in the freezer.

Not only the breast is edible in turkey
Everyone usually starts with the breast meat of the turkey, as this is the part that has the most neutral smell and taste after roasting. You can vary it in any way you like, whether it's fried in a little flour, roasted in its natural state, with peach compote, or stuffed with lots of cheese and ham as cordon bleu. The main thing is to make it easy to work with, quick to prepare and not too blatant. Its most popular dishes are pickled soups and stews.

The last time we were in Mátra, we went to a very cosy bistro in Gyöngyös, where everything from street food to the great classics were on the menu. You wouldn't believe how easy it is to spice up your autumn meals with nutritious and healthy foods.
Did you know? Turkey gizzards should be precooked before roasting, which takes at least 1.5 hours. However, it's best to cook it with lots of vegetables, spices and stock for 6-7 hours. That's when it gets really crumbly and buttery, and the leftover soup is the perfect base for anything.
