The peculiarity of gastronomy is that, as wide as it is, most people still prefer the simplest dishes in everyday life. That's what dumplings are, whatever form they take.

When I ask my friends or family what they would like to eat that day, most of the time, they don't have an answer right away. There are, however, some foods that I can enjoy at any time. A good sour cream pie, tomato pasta with lots of cheese or a potato dumpling stuffed, with sour cream on top. All three are simple and not too intrusive, which can be eaten for lunch, dinner, and even a flatbread and dumpling for breakfast on a busy day.

Dumplings are simple, quick and filling

It cooks up in minutes, everyone loves it and, once the dumpling is prepared, you just need to fry onions or add bacon and you're ready to serve. Most of the dumplings are basically made with potatoes, flour and a few eggs, which can then be varied to taste. A universal pasta that can be sweet or savoury, with an unpretentious flavour that goes with everything. It can be served with a wild boiled egg, a stew or seasonal fruit with sweet sour cream, nuts, poppy seeds or crumbs. In the freezer, the dumplings keep for a long time and you only ever need to take out as many as you need. If you make it yourself, if you we order, in both cases, it's worth thinking in terms of larger portions, so that you can just grab a couple from the freezer if you're short of time.

It is well known that stuffed meat is one of the country's great favourites, especially when it is also fried. Whether it's a canteen, mum's kitchen or a fast-food joint, you can always go for a cordon bleu or a chicken breast stuffed with cheese. We're the same way with chocolates, biscuits and of course dumplings, stuffing is like a kinder surprise, we're always happy to have it wherever it is. If sweet, peanut butter, jam or vanilla tops the list, if savoury, cheese, bacon, ham and pumpkin pie. The tarte tatin or, elsewhere, pumpkin pie is a symbol of homemade flavour. Flavour, fat, creaminess and a perfect pairing with potatoes.
