Black mussels in white wine are one of the best and simplest starters, so they should be on the menu of any restaurant serving Mediterranean or Italian cuisine!
Ingredients:
- black mussel in shell
- Tiger crabs
- vaj
- parsley
- garlic
- salotta onions
- dry white wine
- salt
- freshly ground pepper
- lemon
- baguette
- extra virgin olive oil
Ingredients:
- Fry chopped shallots and sliced garlic in a little olive oil until translucent.
- Add the white wine, and once it has boiled, add the mussels, which have been cleaned beforehand. Add salt, pepper, freshly squeezed lemon juice and chopped parsley.
- After 3-4 minutes, add the cold, cubed butter and turn the wine and stock under the shells into a sauce. It's important not to boil the butter anymore, just stir and you'll get a nice silky sauce.
