Unfortunately, the pandemic has taken on global proportions, with serious repercussions in many areas. Austerity has created an unprecedented situation. Many people have come out of this incredibly difficult situation with nothing to show for it. Some sacrificed everything to survive and some gave up. The viral situation has also given us an opportunity to be much more aware and responsible in our health protection and to observe hygiene requirements to the letter.

The dramatic situation has fundamentally changed the mindset of hospitality operators. It has pushed them to come up with radically new, innovative and cost-effective solutions. Everything slowed down a bit, changed. The takeaway market has boomed and consumer and guest habits have changed. The immense amount of change has made the familiar obsolete, and established habits have failed and continue to fail.

Few sectors have been as badly affected by the crown virus crisis as the food and hospitality industry. While many businesses have been able to adapt to the „new normal”, the future is still uncertain. The rules have become much stricter, and catering establishments are much more vigilant in adhering to the basic principles already in place. The higher food safety and epidemiological risks should not be forgotten, as they still exist. Meanwhile, the impact of global warming has left its mark on for the supply of raw materials, and the economic crisis has led to higher prices. The situation is challenging, whether we are talking about the sectors concerned, the financial environment or public policies.

The future of hospitality can be a cause for genuine concern. From restaurant professionals felt that their economic situation had faltered. Few people in our country were able to take advantage of the solutions and opportunities offered by the government. They had to finance their operation „out of their own pockets”. However, the process has not yet stopped, as the consequences of the virus have affected the global economy, and thus the cost of running a hospitality and tourism industry.

Every catering business is a different world, where unique solutions need to be applied. For each, there is a need to update their own system and make it profitable. What is certain is that all those who today are involved in catering, they have made, and are making, many sacrifices.

Industry professionals are realistic about the future. Despite the problems, many restaurants have reopened and are working hard. Everyone's responsibilities have increased. Changing customer demands, rising commodity prices, the upward trend in operating costs all have to be flexibly adapted to.

At the moment, it is mainly domestic guests that can be relied on and on which the profitability of the units can be built. Maintaining quality, guest satisfaction and improving service levels are of paramount importance. Given the opportunities available, this is undoubtedly a difficult task. Guests are no longer afraid to go to communities, but wallets are flat. Austerity and reckless spending have become the norm in society. Therefore, the profitable operation of a catering establishment is influenced not only by professional solutions but also by social trends. Professional organisations that, in consultation with the government, are creating various opportunities and strategies to boost the sector have a lot to contribute to building the future.
