Why pulled pork

Pulled pork is an American barbecue. More specifically, it's a dish from the southern United States, which is simply established. It's actually due to people being hungry and having plenty of time, but that remains to be seen. The basics of pulled pork are simple. It's simply based on shredded, grilled pork shoulder. now perfect form. Typically, they built a fire and, because there was time, smoked the meat very slowly. To put it even more simply, they just left it in the smoke (there will be a password for that). They did this while they were busy with their cattle, their daily chores, and basically doing nothing in the endless wilderness of the field. Having spent most of the day scorching in the sun in the smoke of the burnt tree, they simply took it off. As it had become extremely soft, write and say, it was shredded into tiny shreds. And so it began.

We do it better nowadays

The time for the so-called indoor versions has also begun. Of course, this required an oven that could give off the heat of the sun and the smoke of the wood. Therefore, slow cookers were used for indoor versions. The point is the same left over, cook for a long time, then chop by hand and mix with sauce. Pulled pork, which is almost always cut shoulder, is usually slow-cooked by first dry rubbing it and then smoking it on wood. This is not a grilling method! It's a whole different order of magnitude and a whole different skill set.

Of course, pork is no longer a criterion at all, it is made from a variety of meat. The perfect meat, matured in a dry marinade, is separated from its environment for a long time, 10-18 hours, and put into the BBQ oven. Of course, ovens and cooking techniques now follow a variety of methods. They also go by many different names, grill, smoker, pit, cooker... But the point is that everything is cooked in smoke!

Why it is difficult to make, but simple

There are fundamentally different opinions on how to make it in the BBQ world. What is certain, however, is that in order for the meat to be properly „pulled”, it must reach an internal temperature of between 90.5 and 96 °C, with the smoker temperature at around 135 °C. The cooking time is long, often more than 12 hours. It is not worth speeding up the process - although technologies are available - because it simply won't be as good. If cooked properly, the meat can separate from the bone just by looking at it.

Pulled pork is loved all over the world, but in its home country of America it is considered a national dish. It's eaten on burgers, on its own, with a side dish, in tortillas and in a myriad of other ways, and with a wide variety of sauces.#
