Although it is a relatively heavy dish, a good round stew will do the trick at any time, whether it's a family event or a gathering of friends. The main thing is to cook it in a pot and, if possible, use wood. That way the flavour is perfect. In the summer, for example, you can make a fantastic pickled gherkin to go with it.
Ingredients for 4 people:
1,5 kg pig nails
0,8 kg pork knuckle
4 tbsp oil or lard
1 strong pointed pepper
4 heads of onion
1 TV pepper
8 cloves garlic
1 tomato
1 dl red wine
Water
salt, pepper
1 tsp ground cumin
1 ek red pepper
2 bay leaves
Preparing the round stew:
Wash the meat thoroughly, and clean off any hairs.
Saute the chopped, salted onion until translucent. Then add the tomatoes, peppers and crushed garlic. When the sinking fund when tender, add the ground pepper and cumin, then salt and pepper to taste. Now you have the perfect stew base. Add the pork knuckles, cut to the right size, and the diced hind legs. Then cook until perfectly tender. If necessary, add the water that has evaporated.
You can serve it with boiled potatoes, or you can cook it in the fatty soup of the leg. If you decide to do this, add the potatoes cut in half to the almost done meat and add the water.#
