In Transylvania, chernozem has a high humus content (3-6%), excellent water retention and is easy to cultivate. This soil type has evolved over 200-300 years and is particularly suited to starch-rich but non-watering potatoes. The annual rainfall is 600-800 mm and cool nights help to increase the starch content of the potatoes - which is why they are crispy when baked and creamy and crumbly when cooked.
