It was Katharina Prato's cookbook „The South German Kitchen” that catapulted it to world fame, and it is still used today as a reference in traditional confectionery as one of the founding works of the.

The legacy

The Austrian gastronomy and especially one of the most best-known cake. A chocolate cake after all. It's made up of two layers of thick, not too sweet chocolate sponge cake dough and a thin layer of apricot jam in between. The top and sides are covered with chocolate coating. Legend has it that he created it in 1832 at the request of Prince Metternich, perhaps the most ardent and effective defender of the monarchy's order. He ruled with an iron hand and was a man who could not be refused. At the time, Franz Sacher was only a confectioner's apprentice, only 16 years old, but he was famous far and wide was about his cakes. Naturally, he intended to accommodate this very honourable but specific request, so he worked on the recipe for several days. Some say that when Prince Metternich came to see him, he presented the cake to him with shaking hands and downcast eyes. After the Prince had tasted it, he patted the „child” on the shoulder and expressed his appreciation. The cake speciality has come a long way since then, and there are quite a few variations. The recipe was further developed by his son, Eduard Sacher, who, following in his father's footsteps, was apprenticed to the court cook. As many people started to copy it after a while, several recipes are now considered original. Finally, the Hotel Sacher wooden box cake with chocolate seal has become the trademark „Original Sacher-Torte”.

The original recipe

During their work in Zseliz, the researchers found a handwritten recipe document from Franz's grandson's wife. No one has yet been able to prove whether this is the original recipe, as the recipe for the cake is from a very valuable, a closely guarded secret that is said to be kept in the safe of the Sacher Hotel. What interests confectioners most is the amount of chocolate in the original recipe. They also use special flour and unique eggs. The secret has not been revealed until today. The flavour we know today is actually the version made by Eduard Sacher. The recipe for the Sacher cake, claimed to be the most original, can be tasted at the Hotel Sacher in Vienna. Of course, it is presumably quite different from the original 19th century recipe by Franz Sacher. Many professional pastry chefs also say that no one knows the original recipe, and even if they did, it would be extremely difficult to make. In fact, there are a lot of question marks surrounding it.
