This dessert has only a few ingredients and is very quick to prepare, but many people are still afraid of it. The secret to a good soufflé is premium quality, high cocoa content dark chocolate, precise measuring of the ingredients and attention to the baking time and temperature!
Ingredients (for 4 people):
63 g flour (BL 55)
63 g icing sugar
3 whole eggs
2 egg yolks
20 g butter for the mould
5 g cocoa powder
1 pinch of salt
Preparing the souffle:
From dark chocolate and the cubed butter in a stainless mixing bowl and place over a steam. It is very important that the water does not touch the bottom of the mixing bowl! Melt and then homogenise, i.e. make a homogeneous mixture. Remove from the steam. Place the whole eggs and egg yolks in a mixing bowl and whisk with a hand mixer until smooth. Sift in the flour, icing sugar and a pinch of salt and continue to whisk. Add the chocolate to the egg mixture and mix until smooth. Grease the soufflé moulds with butter and sprinkle with cocoa powder to make it easier to separate the cake from the moulds at the end of baking. Fill the soufflé moulds with the chocolate mixture. Bake in a preheated fan oven at 190°C for 10 minutes. Serve immediately, hot!#
