Raspberries, I think, are the red fruit eccentric. It's not really tart, it's not really red and it's not really sweet, it's something else. It's precious because somehow we always have less of it, at least less than we could eat in one sitting. It's very expensive fresh, and it's also usually measured by the decimal. This year, we decided to plant raspberry bushes, since basically raspberry bushes spread like weeds if you have the space for them. There will be plenty of them in a couple of years, and if we are lucky, there will be plenty of crops. Since the idea, as I said, is this year's, we still have very few raspberries, which is 5 a day. Every night we walk out to the garden, share those 5 grains, then wait for the next day, the next batch. and then we wait curiously to see what our raspberry bush will become. Before our eyes, we could already see mountains of raspberries in piles, jams lined up in a pantry in grandma's thousand-year-old jars, and of course, papus' well-hidden raspberry schnapps. But all these things, the raspberry hill, the jam, the brandy, did not come to anything, so a good raspberry picking place.

You'd never guess what else raspberries are good for

A single portion or a grain of raspberries is also perfect to spice up and deepen the flavours. It's sensational in spicy, peppery sauces, like the famous Cumberland sauce. Cumberland sauce has been in our recipe books for hundreds of years, and King Matthias made similar sauces for his table - according to our surviving writings. Of course, this was just one of many, as it is known that Matthias had at least 40 sauces on his table during a feast. Returning to the secret of Cumberland, which is the brilliant pairing of red fruit - including raspberries - with wine, orange, pepper and butter. Even when cooking, the aromas make your mouth water, let alone when served with roasts. A raspberries is also used in meat marinades and is a popular ingredient in spicy drinks.

How many raspberries can you eat a day?

It cannot be overdone, but the recommended amount is 10-15 deca per day, which is good if eaten raw. As usual, like the rest red fruit, it strengthens the immune system, stimulates blood flow, purifies the blood and even has a positive effect on the kidneys. What is rarer is that it is particularly good for pregnant women or those planning a baby. In folk medicine it has long been used and consumed in a blessed state, not only the fruit but also the leaf, boiled down for tea.

It's a great idea and a great variety of flavours that we've become used to in recent times. Nothing illegal, but I suspect addictive. Our love of raspberries has led us to try large quantities good quality raspberries to buy, which I use to make morning drinking leaves. It's not just any pair, though, as I blend it with celery stalk, water and a pinch of salt. I put it in the fridge in the evening and in the morning, on an empty stomach, it's something of an incredible doping and flavour experience. The inspiration comes from Eastern cuisine, as various cooling drinks are invented and consumed in the hot summer for generations. A light, fruity yoghurt drink with herbs, or a variety of fruit leaves, mint and honey. To me, raspberries and celery seemed like a pretty good pairing, if only for their physiological effects, but we got so much more than that. And for guests, it could be a sensational idea as a “welcome drink” or even as a dessert.#
