Biryani is a super Indian rice dish, perhaps best compared to Spanish paella. The essence of biryani lies in the basmati rice and the variety of spices. You can serve it with chicken, mutton, crab, tofu, eggs or practically any vegetable you like, or that has been rotting in the fridge for a while.
Ingredients for 4 people:
- 30 dkg basmati rice
- 30 dkg Tiger crabs
- 0,5 g garam masala
- 1 g turmeric
- 2 dl olive oil
- 1 lime
- 2 heads onions
- 0,5 g Roman cumin
- 3 tomatoes
- 2 dl yoghurt
- Chilli to taste
- Fresh coriander
- Mint leaf
- Salt, pepper
- Ginger
- Vegetable juice
Preparing the biryani:
- First, prepare the marinade for the dish.
- Put half the yoghurt, half the turmeric, garam masala, chilli, grated ginger, finely chopped mint leaves, lime zest and juice in a bowl and mix together, then add the prawns.
- Put in the fridge for 30 minutes.
- In a frying pan over a medium heat, fry both halves of the tiger prawns in a little oil and set aside.
- Finely chop the onion and fry in a little oil.
- Add the other half of the turmeric, season with salt and pepper and pour in the vegetable stock.
- Bring to the boil, then strain into a bowl.
- Simmer the rice in the strained stock until it is done, then mix it with the crab and you're done!
