Preparation

Cut the boar's head into 1 cm x 1 cm cubes, sauté them on the onion, then add a little stock (or water if you don't have any) so that the meat is covered with the liquid by 2-3 cm. Add bay leaves and dried tarragon, salt and pepper and cook for about 2 hours. Pour in about 1 litre of broth, add the wild mushroom mixture, the vegetable mix and the gnocchi. Finally, whisk in the sour cream or cream by adding a little of the juice from the stew to the sour cream or cream, which has been whisked with a little flour, and stir until smooth, then gradually add the whisked mixture to the stew.

Season with lemon juice at the end.
