Ingredients:
Salt
Potatoes
White pepper
Raspberry
Onion
Brussels sprouts

Preparation:
The venison is cleaned and put in a salt solution for an hour. Then drain and place in a 58° water bath for 40 minutes.
Meanwhile, the potatoes are made into a delicious mashed potato by adding butter and cream. For the other side dish, fry the cubes of bacon in a little fat, add the finely chopped onion and sauté. Blanch the Brussels sprouts in boiling water, then toss them with the onion and bacon base and set aside until serving. Caramelise a little sugar in a quick saucepan, add the raspberries and red wine jus. Brown the prepared venison loin in a pan of melted butter and let it rest for a few minutes before serving. All the ingredients are seasoned to taste.
