You've probably come across a really delicious dish that literally made you salivate! For me, this is one of my favourite recipes. It's a really nice, light summer dish.
Ingredients for 4 people
Chicken breast fillet supreme 1 kg
Oil 10 dl
Salt
Black pepper
To serve: 1 lemon, parsley
Preparation:
Pour the oil into a non-stick frying pan and bring to the boil. Remove the chicken breasts from the bag, pat dry with paper towels and season with salt and black pepper. Then rub around slightly on all sides for the perfect flavour. Set our oven to a hot grill and cook the chicken breasts at 200°C for 16-18 minutes until red. Leave to rest until the sauce is ready, covered with an aluminium foil.
In the same pan, fry the red onion in the remaining oil, then add the sliced chanterelles or wild mushrooms. When this has been browned a little, add the cooking cream and season with salt, pepper and thyme. Bring to a boil until thick enough, then add the perfectly cooked supreme chicken breasts. Drizzle with a few drops of fresh lemon juice and sprinkle with freshly chopped parsley.#
