In the westernmost part of Turkey, in the former Thrace region, Edirne's local luminaries are working to get their town's famous fried liver, the province's signature dish, inscribed on UNESCO's World Heritage List.
„This roast Mayhas a place on the UNESCO list, because nowhere else in the world can you find such a delicacy,” said chef and food writer Özlem Mekik.
According to Mekik, the unique, inimitable taste of the food is due to the fact that the animals drink only spring water from the area.
The officials promoting the food do not let us forget that Edirne (or Drinapoly in Hungarian) was once the capital of the Ottoman Empire, so they never tire of using the term „court food”.

„The roast May was a delicacy at Ottoman court feasts, the offal is cut up and prepared in a very unique way,” says Bahri Dinar, chairman of the province's Fried Liver Quality Control Committee.
Kemal Soytürk, head of the province's Culture and Tourism Department, told Anadolu Agency that all necessary steps have been taken to add the dish to the UNESCO list.
„We have teamed up with Turkey's leading chefs. We want to show the world the Turkish court cuisine and we want to tell this to UNESCO,” said Soytürk.
