For those who love mangoes, this dessert is a favourite, with both mango cream and mango paste, but what really brings out the flavour of the fruit is the crème fraîche. Many of us have tasted it, but we're not sure we know what it is.

A mango fruit that should either be eaten raw, on its own, or put on top of cakes. It's so refreshing, sweet and slightly tart at the same time that there's no need for sugar substitutes, just blend, slice or dice.

Mango is not only delicious, but also good for your eyes

You'd never guess that sweet mangoes contain hardly any calories. It's safe to eat large quantities, but it's best to buy and eat the ripe ones. Very hard and green mangoes are not as high in vitamins and have a less intense flavour. By eating a large piece of mango you can tick off 70% of your daily vitamin C requirement, and it also takes care of your digestive system. Extra interestingly, it also has a vision-enhancing effect. I know, legend has it that carrots make you see better and whistle, but let's stick to mangoes for now. Most fruits and vegetables have a very good effect on our body and our vitamin balance, mainly because they replenish our vitamin stores and boost the immune system, especially the more colourful fruits. The more yellow the mango, the more ripe and healthy it is. Researchers have also attributed a cancer-preventive effect to this fruit, but this is less widely known.

Mango cream under crème fraîche

What is crème fraîche really: sour cream or yoghurt? It's more likely to be between mascarpone and natural yoghurt in terms of consistency and taste, which unfortunately is less available in Hungary for the time being. There is, however, a heavenly creamy mango slice recipe, in which we need to use this to get the perfect overall effect.

Sour cream is made from milk by adding lactic acid bacteria, while crème fraîche is made from cream. The difference is not only in texture but also in taste, as crème fraîche is slightly sour. This is usually brought out by adding lime juice, and finally a little sugar is added to round off the flavour. It is delicious and light, both in summer cakes and cooked pasta.

Cake and chardonnay - a real summer menu

Of course, it's not just the mango and crème fraîche that can be perfect. Fortunately, I'm seeing more and more places in bistros and patisseries where I'm pairing cookies and wine. It's a little bit French and a little bit Italian, where it's no problem at all to run out of wine during the day. Not during working hours, of course, but for a Saturday afternoon snack with friends, there's no better surprise. Even better, you don't even need to turn on the oven for this one, just pick a good chardonnay and you've got the whole team bought. Of course, afterwards you can have some ham and cheese with some baguette. The creamy mango slice is a great pairing with the slightly floral chardonnay grapes, which will bring out the sweetness of our golden yellow mango cream even more. #
