Christmas fishing memories 3/1

Virus or not, the Christmas holidays are fast approaching, and according to the figures, the population of Hungary consumes around 80% of its annual fish consumption during this period. Whether this is a good thing or not is not worth debating (it would be better to have more fish we'd eat), it's time to figure out the Christmas menu and/or test where to get the best fish.

The Fish Restaurant in Tiszacsege is closed, like every other restaurant in Hungary, but it doesn't let its guests down. The owner of the Tisza-side restaurant, János Szalai “Duda” Szalai, is trying to please everyone, as always.

- We cook takeaway, orders can be placed by phone all week, and then the food is ready to take away between 11am and 3pm on Friday to Sunday. We work with a smaller menu, both during normal hours, but we cook and bake everything on it, you just take it home and you're ready for a delicious lunch or dinner.

- At Christmas, the fish juice is a priority, and in the case of a fisherman's cottage this is even more so. How fish are used for it?

- We put in everything that is good. Bream, whole cormorant, with for carp, for catfish and his trimmings, his skin, his bones. We put in everything that makes the chowder taste really good.

- Since the regulations state that restaurants can only process fish from fish ponds or from abroad, where do the fish come from for your famous Tisza fish soup and other dishes on the menu?

- We have our sources of supply, all of them reliable, delicious fish. We order a lot from From Matusz-vadt for example, pollack, fluvial catfish, bream is.

- For everyone who loves it, there's always a surefire chowder recipe for everyone. What's your secret?

- We cook fresh every day, we pour out what is left over from the day before. My colleagues strain the boiled soup by hand, a trick that my colleagues learned from old Tisza farmers' wives and cooks. That's the secret, and good ingredients, good hal and good Peppers.

- What other fish dishes are on offer during this lean period?

- For example, fillets of perch, which are very popular and delicious. It is prepared stuffed, fried, grilled and served with a salad in line with modern nutritional principles. We try to meet everyone's needs. Our chefs and staff are very creative, we regularly consult and discuss what we have seen and heard. We are always thinking of new things to surprise our guests.
