If you like Asian flavours, you're sure to love this coconut milk salmon recipe. A little sweet from the coconut milk, a little spicy from the chilli, a real flavour bomb that will brighten up even the most gloomy October day!
Ingredients for 4 people:
- 80 dkg salmon fillet
- 5 cl olive oil
- 1 tbsp brown sugar
- 4 cloves garlic
- 1 small piece of ginger
- 4 dl coconut milk
- 1 bunch of spring onions
- Salt, pepper to taste
- juice and 1 zest of 3 limes
- 1 tsp red curry paste
- Fresh chilli to taste
- 1 handful fresh coriander
Preparing the coconut milk salmon:
- The salmon cut into 4 equal pieces, then fry in a pan with a little oil over high heat for 4-4 minutes on both sides and set aside.
- Add a little more oil to the pan as needed. Fry the onion and then add the grated garlic and the ginger.
- Add the sugar and leave to caramelise.
- Pour in the coconut milk, add the curry and season with the lime juice, zest, salt, pepper and finally the chilli. Cook over medium heat for a few minutes until slightly thickened.
- Add the salmon and cook together for about 4 minutes. Sprinkle with fresh coriander before serving.
