If you like Asian flavours, you're sure to love this coconut milk salmon recipe. A little sweet from the coconut milk, a little spicy from the chilli, a real flavour bomb that will brighten up even the most gloomy October day!

Ingredients for 4 people:

  • 80 dkg salmon fillet
  • 5 cl olive oil
  • 1 tbsp brown sugar
  • 4 cloves garlic
  • 1 small piece of ginger
  • 4 dl coconut milk
  • 1 bunch of spring onions
  • Salt, pepper to taste
  • juice and 1 zest of 3 limes
  • 1 tsp red curry paste
  • Fresh chilli to taste
  • 1 handful fresh coriander

Preparing the coconut milk salmon:

  • The salmon cut into 4 equal pieces, then fry in a pan with a little oil over high heat for 4-4 minutes on both sides and set aside.
  • Add a little more oil to the pan as needed. Fry the onion and then add the grated garlic and the ginger.
  • Add the sugar and leave to caramelise.
  • Pour in the coconut milk, add the curry and season with the lime juice, zest, salt, pepper and finally the chilli. Cook over medium heat for a few minutes until slightly thickened.
  • Add the salmon and cook together for about 4 minutes. Sprinkle with fresh coriander before serving.
