Middle Eastern cuisine is very diverse, with a strong taste for intense flavours and a wide variety of meats. You can find everything from fresh fish to beef, lamb, goat and various poultry. I have brought you a golden durbin recipe with lots of exciting ingredients!

Ingredients for 4 people:

  • 4 pieces goldfinch
  • 2 cloves garlic
  • Salt, ground black pepper to taste
  • Small bunch of oregano
  • A bunch of parsley greens
  • A pinch of ground cardamom seeds
  • 10 dkg pomegranate seeds
  • Four servings of steamed basmati rice
  • 1 lemon
  • A few slices of orange

Making the golden clutch:

  • Clean the dorado thoroughly, then make three or four cuts on the side to allow the flavours to penetrate.
  • Rub all the listed spices all over, the abdomenrgo to add the herbs, garlic and a few lemon wedges.
  • Put it in a bowl and cover with plastic wrap and leave to stand in the fridge for a few hours.
  • Before baking, insert the orange slices.
  • Then you can put it on the grill grate and cook it until it is nice and red.
  • Meanwhile, prepare the rice as usual, sprinkle with pomegranate seeds and serve.
