Ingredients for 4 people:
- 60 dkg African harlequin
- 2 l FrissHal chowder without fish
- 1 dl dry red wine
- 3 pieces carrots
- 1 head onions
- 1 clove garlic
- 2 pieces turnips
- 4 pieces bay leaf
- juice of 1 lemon
- 1 small bunch of fresh dill
- 200 g sour cream
- salt
- ground black pepper
Preparing the fish stock:
- Fry the finely chopped onion and crushed garlic in a little fat. Add the diced carrots and turnips. Continue to fry and add 1 dl red wine. Add the bay leaf, a little salt and pepper. Sauté the vegetables until they are semi-soft. When this is done, pour in the water with the finished chowder and bring to the boil.
- Meanwhile, the dice African catfish salt and pepper to taste.
- Once the soup has come to the boil, reduce the heat and simmer gently. Add the sour cream and the lemon juice. Add the catfish cubes and after 5-6 minutes of cooking, the soup is ready. Finish by sprinkling in finely chopped dill.
- Serve with dill and lemon sour cream.
