Preparing the lentil soup:

  • Soak the lentils in cold water overnight. 
  • Cook the stock for the from smoked bone a red onion with garlic, bay leaf and whole pepper.
  • Chop the other head of onion finely and fry it in a little fat. Add the mustard and fry this too. Add the soaked lentils, pour in the filtered smoked stock and simmer until the lentils are tender. 
  • In the meantime, make a Hungarian stir-fry to coat the broth and boil it well so that the flour flavour doesn't remain. Finally, heat the sour cream and add the vinegar. 

Preparing the emperor meat:

  • In a hot pan at 40 °C, after 15 minutes of tempering, start cooking the meat on the skin until it is crispy, then crust all sides.
  • Cut into nice slices and serve with the main course.
