We think you could use some extra money all year round, so it's not just New Year's Eve you could use a portion of lentil stew. Especially if it comes with a delicious topping like this...
Ingredients for 4 people:
For the main course:
- 250 g lentils
- 2 heads of onion
- 3 cloves garlic
- 2 pieces bay leaf
- 1 tbsp mustard
- salt
- 10 whole grains black pepper
To the emperor:
- 4 tbsp lard
- 2 tbsp fine flour
- red paprika
- 1,5 dl sour cream
- 1 smoked bone
- 4 package sous-vide emperor meat
- 1-2 tbsp 10% vinegar
Preparing the lentil soup:
- Soak the lentils in cold water overnight.
- Cook the stock for the from smoked bone a red onion with garlic, bay leaf and whole pepper.
- Chop the other head of onion finely and fry it in a little fat. Add the mustard and fry this too. Add the soaked lentils, pour in the filtered smoked stock and simmer until the lentils are tender.
- In the meantime, make a Hungarian stir-fry to coat the broth and boil it well so that the flour flavour doesn't remain. Finally, heat the sour cream and add the vinegar.
Preparing the emperor meat:
- In a hot pan at 40 °C, after 15 minutes of tempering, start cooking the meat on the skin until it is crispy, then crust all sides.
- Cut into nice slices and serve with the main course.
