If you want to surprise your loved one with something really easy to prepare for Women's Day, this spinach gnocchi is the perfect choice! Don't be discouraged if your loved one is gluten intolerant, because we've created a gluten-free gnocchi for this brilliant, light Italian recipe.
Ingredients for 2 people
- 400 g gluten-free gnocchi
- 120 g parai leaflet
- 3 cloves garlic
- 10-12 grains cocktail tomatoes
- 2 dkg vaj
- Olive oil
- 0,5 dl dry white wine
- Salt, ground black pepper to taste
Preparing the spinach gnocchi
- Cook the gnocchi in boiling salted water for 2 minutes. Meanwhile, heat a little olive oil in a pan and fry the sliced garlic. When the slices are starting to brown, add the gnocchit and add some of the cooking juices. Add the white wine and after a short boil, grind in the black pepper. Then add the spinach and the halved cocktail tomatoes. After about 2-3 minutes of cooking, remove from the heat and add the cold butter to cream the white wine flavour.
- To serve, sprinkle the spinach gnocchi with grated with parmesan, accompanied by a glass of light rosé or a nice irsai.
