The most unusual Bocuse d'Or competition of all time took place in Lyon in recent days. Instead of the usual end of January date, the finals of the most prestigious cooking competition of all time were postponed first to the end of spring and then to the end of September. The participating countries were fully prepared for the Bocuse d'Or, and the unanimous opinion of the judges was that it was a very evenly matched competition. It may be added that there was time to prepare.

The competition was held after two years of epidemic. Apart from the countries that had stayed away, the medical tents set up outside the venue and the half-empty stands, the tournament was a great success. The standard was undoubtedly high. The competition lasted for two days in total, with teams from 22 nations competing.

As for the meat theme, the For the first time in the history of the Bocuse d'Or, the teams have the same bowl, so everyone had to be presented with the same plate of meat. A metal dish was added to the bowl, in which a „casserole” was served. This became the third side dish of meat, which the teams prepared from vegetables and seeds.

The 2021 competition special feature was that instead of the usual plate theme takeaway menu three dishes, all of which had tomatoes as a mandatory ingredient.

The meat menu of the Hungarian team consisted of the following elements: beef stefania. Two types of vegan potato circles: confit potatoes with onion jam, pickled dill leaves and thyme. Crispy potato pancakes with mashed potatoes. Vegetable friccassee. Broccoli and beetroot salad with horseradish and apple.

The starter for the takeaway theme was ratatouille tart with confit tomatoes, tomato vinaigrette and parsley oil. The main course was a prawn stuffed derelict with white tomato sauce, grilled tomatoes and prawn bisque, which was served in the Hungarian team's takeaway box. For dessert, tomato and strawberry elderflower baba was served.
