Black mussels in white wine are one of the best and simplest starters, so they should be on the menu of any restaurant serving Mediterranean or Italian cuisine!

  • Fry chopped shallots and sliced garlic in a little olive oil until translucent.
  • Add the white wine, and once it has boiled, add the mussels, which have been cleaned beforehand. Add salt, pepper, freshly squeezed lemon juice and chopped parsley.
  • After 3-4 minutes, add the cold, cubed butter and turn the wine and stock under the shells into a sauce. It's important not to boil the butter anymore, just stir and you'll get a nice silky sauce.
  • A cancer in the same way, except that you add colour at the beginning with the onion
    together, and then add the white wine and the other ingredients in the same order.
  • Serve with freshly baked baguette.
