Across the country, French-style bakeries, breakfast bars and even all-day brunch restaurants are becoming increasingly popular, but few can offer the original quality. „Bread is the heart of life” - states Bridor. They believe that the art of baking is part of every country's cultural heritage, so one of their most important principles is respect for authenticity: they work with chefs and bakers all over the world, producing authentic products, respecting the traditions of each country.

This approach has paid off, as the company, founded in 1988, is now represented in more than 90 countries worldwide. It started out in Quebec, but it didn't take long for Bridor de France to set up operations in the French province of Brittany, near Rennes. Here, they are trying to meet the growing demand for frozen pasta, particularly from the elite, who are increasingly open to the consumption of such products.

A small factory in a large factory

A Bridor de France has set up a dedicated manufacturing plant, where from the very beginning it has sought to implement the concept of founder Louis Le Duff: „small-scale production under large-scale conditions.”

The factories in Servon-sur-Vilaine and Ille-et-Vilaine produce a wide variety of pastries, but what they have in common is that these pastries rise to the level of French sophistication, whether it's an extra crispy baguette or a buttery croissant. The Matusz-Vad range includes, pâtisserie you'll find products with a touch of flair, such as mini brioche or butter croissants filled with almond cream. Specialities such as nut and olive bread are also available, while for dieters, wholemeal rye and semolina bread is available alongside poppy seed baguettes.

The company's credo is that the right technology should not be sacrificed at the altar of productivity or cost savings. „A Bridor de France draws directly from the traditions of French bakers: we make our products slowly, gently and with moderation,” they say. The dough is thus left to rise for a long time, giving the yeast the fermentation time it needs. This enables the production of delicious pastries with a rich, intense flavour, similar to good cheeses and wines.

OUTSTANDING CHOICE

Their international catalogue includes more than sixty types of bread, from rustic, country-style pastries to gourmet pieces, from wholemeal loaves to twisted baguettes. The aforementioned organic range alone boasts 23 different pastries from sesame seeds to poppy seed buns, but if that's not enough, the company also has a dedicated gluten-free range. But you'll also find „snacks” such as pizza snails or cheese and ham pillows in the selection. And of course, there's no shortage of sweets: macarons are available in seven separate flavours, from raspberry to pistachio, while tartlets range from milk chocolate-passion fruit to chestnut.

The company's customers are catered for at a wide variety of events, so they are prepared for everything from continental breakfasts to catering for banquets. But they don't just serve, they also occasionally educate: they run regular training sessions around the world to teach them how to cook.

Delicious even after freezing

Few people know, but freezing has been a way of preserving food since time immemorial - even the Eskimos used it to keep fish fresh. But what really counts is the quality of the food when it is frozen, according to Bridor, where the taste of the products is guaranteed not to change. At the same time, the technology allows the world's largest hotels to offer fresh baguettes to guests every day, anywhere, anytime.

As far as raw materials are concerned, the company takes great care to work with only the best quality. Every ingredient, from flour to yeast, from seeds to fruit, is put into the dishes after an extremely strict certification procedure. The vanilla used in pains au chocolat, for example, is all-natural, unlike the chemical ingredients found in many competing products. The brand also insists on using only pure butter, free of hydrogenated fats, and avoids margarine, among other ingredients.

In fact: recently an organic Bridor de France a bread and pastry line, made up exclusively of eco-friendly ingredients from organic farms. Their high level of commitment to tradition and to the profession is demonstrated by the fact that since 2011 they have been official partners of the Bocuse d'Or competition, which is already well known in our country.
