Branzino, also known as sea bass, is a saltwater fish. Its flesh is white, extremely tasty and rich in protein. It makes a great, light summer dish in no time.
Ingredients (for 4 people)
- 1 kg branzino filé
- 100 ml olive oil (of which 50 ml for the dressing)
- 100 g black olives
- 150 g feta cheese
- 4 tomatoes
- 1 snake cucumber
- 2 heads of red onion
- 1 tsp basil
- 1 lemon
- Salt
- Bors
Preparing the branzino:
First we prepare the dressing. In a bowl, mix the olive oil with the juice of half a lemon and the basil. Put it in the fridge for an hour to allow the flavours to blend.
Cut the tomatoes, cucumber and onion into small cubes. Slice the olives and mix with the other vegetables. Cut the feta cheese into small cubes and add it to the mixture.
Take the dressing out of the fridge, pour it over the salad, season with salt and pepper. Stir gently to avoid crumbling the cheese. Put back in the fridge for two hours.
Rub the fish with olive oil and fry in a hot pan skin down start baking. Press down for 5-6 seconds to keep it flat. Reduce the heat, fry the skin for a few minutes until crispy, add salt, turn and fry the other side, taking care not to overcook it, or it will dry out!
With the salad served together.#
