If you're feeling like you've had your fill of stews with your friends, try how the real chilli beans are made!
Ingredients for 4 people:
- 1 kg minced beef
- 20 dkg red onion
- 5 dkg garlic
- 2 chilli peppers (jalapeno or chipotle)
- 1-1 green and red California peppers
- 45 dkg canned red beans
- 25 dkg canned corn
- 60 dkg tomatoes
- 15 dkg salt
- 1,5 dl olive oil
- Freshly ground black pepper
- 4 g oregano
- 2 g ground cinnamon
- 4 g ground romaine cumin
- 4 g spicy paprika
- 2 g cayenne pepper
- 4 pieces bay leaf
Preparing the chilli beans
Finely chop the onion, garlic and chilli. Fry the onion in the oil until translucent, then add the garlic, cumin and chilli. After a couple of minutes, add the chopped California peppers and then the minced meat. Fry for at least 5 minutes until the meat is evenly browned. Add the tomatoes, salt and season with your spices. Simmer over a low heat, under a lid, for an hour and a half, or until thick. When this is done, add the drained, rinsed babot and corn. Cook for about 15 minutes more. Taste and adjust to taste if necessary.
Serve with plenty of crusty crusty bread, or perhaps a tortilla!#
