Chicken liver is a very divisive food. Some people love it in all its forms, others can't look at it. I'm a fan of the former, and this recipe is a regular favourite on the dinner table at home, so I'm sharing it with you..
Ingredients for 4 people:
5 dkg pork fat:
Salt
Ground pepper
3 g red pepper
20 dkg cocktail tomatoes
1 kg potatoes
2,5dl milk
Preparing the chicken liver
Clean the chicken livers thoroughly, rinse them in cold water and drain in a colander. Heat the fat and fry the chopped onion until golden brown. Once this is done, add the chicken livers, fry both sides until soft and buttery. Season to taste and add a splash of water and boil for a few minutes to leave a little gravy.
Meanwhile, clean the potatoes and boil them in salted water. When cooked, drain the cooking water, mash with a potato masher and whisk with the hot milk and butter until fluffy. Season with salt, ground white pepper and nutmeg.
Heat the oil in a frying pan and fry the cocktail tomatoes whole over a high heat. This sweet tomato will be the perfect accompaniment to the spicy liver.
When everything is ready, you can serve it as you like.
