It is an old belief that the pig always scrapes the luck of the new year. Some people buy a lottery ticket, or roll the chimney sweep's knob, but we're roasting a nice piglet for New Year's Eve.
The secret of sure-fire luck
Through our traditions and customs, we will do our utmost to ensure that we have a happy, healthy New Year, rich in bountiful harvests and blessings of children. We start with new hopes for an even better, more beautiful and more successful future. And so are our eating habits, which mean that on the first day of the year we don't eat fish because it swims away, or poultry because it scrapes our luck. On the other hand, pigs or pork scrape off our luck and every tiny seed or legume increases our wealth. So it is no coincidence that everyone has lentil soup, pigac or pork on the table.

How did New Year's Eve become a celebration?
Feast of Pope Saint Sylvester from 314 AD, the last day of the civil year, the vigil of the New Year. In the evening, churches hold an Old Year's Eve thanksgiving. In New Year's Eve customs in particular
an important role is played by noise-making, such as the traditional conga, chugging, twirling, gulya-twirling. This was mainly and primarily characteristic of the Protestant villages of Transylvania, but it was also found elsewhere. It was customary to ring the bells from half past eleven to half past twelve to say goodbye to the old year and to link the old year with the new. Then they drew golden water from a well or spring and took a big drink. On New Year's Eve, divination was a typical and great excitement. Young girls made dumplings, cast lead and tried to read the name and occupation of their future husband. Older people and farmers also did fortune-telling, but they were more interested in the weather for the coming year and the abundance of crops, which could be predicted from the weather that day.

It's a bit leaner than pork knuckle, but in this context I think it's a shame to talk about calories. However, the meat of the young animal is still much tenderer and more tender, but it does require some precooking. Many people skip this step, or just boil it in brine, even though there is a lot of flavour added at this stage. Before you do anything with the moules, you should eat them for 1.5 hours in a flavourful simmering broth, with 2-3 types of onions, root vegetables, fresh herbs, and possibly caramelised fruit. Then you can start creating. The popular „Tenderloin baker's wife” recipe can also be the main course of a New Year's Eve party, but roast leg of pork with beer, honey, cabbage and toast is also a memorable experience. There are those who slice the meat after the roast is done, put it on a bed of potatoes and cabbage, and others who make a stew out of it. In any case, I think that a pigskin cooked to a shiny red is the most beautiful decoration on the New Year's Eve table, so let's make the pig's knuckle whole!
