Black bacon, found in the line of tender meat under the hip of beef, is the basis of many delicious dishes. Now we've brought you an infinitely simple recipe for which you're sure to already have everything on your kitchen shelves!

Ingredients:

Preparation of the black bacon:

Brush the well-cleaned black pork chops with a thin layer of mustard and pepper, drizzle with a little olive oil and cover and refrigerate overnight.

The next day, wipe off the oil and mustard, then fry the whole meat in a pan in a little olive oil for a short time, seasoning with salt to taste. Then place in a large baking dish, add 2 dl of water and 1 dl of good quality dry red wine. Cover the whole thing with aluminium foil and gently simmer at about 150 degrees Celsius until tender.

Remove from the pan and place on a cutting board to cool. Then remove the asparagus and cut into 1-1,5 cm slices. Steamed or grilled with vegetables serve with.
